Chicken Quesadillas

Instead of serving up another boring sandwich, add a little spice to lunchtime with Chicken Quesadillas. What a crispy, tasty way to brighten up your day!

What You'll Need

  • 1 (10-ounce) can chunk chicken, drained and flaked
  • 2 cups (8 ounces) shredded Mexican cheese blend
  • 8 (10-inch) flour tortillas
  • 2 teaspoons vegetable oil

What to Do

  1. In a large bowl, combine chicken and shredded cheese; mix well. Sprinkle evenly over each of 4 tortillas and top with remaining tortillas, making sandwiches.
  2. In a large skillet, heat 1/2 teaspoon oil over medium heat. Place one tortilla sandwich in skillet and cook 3 to 4 minutes, or until cheese is melted, turning halfway through cooking.
  3. Remove to a covered platter and repeat with remaining sandwiches until all are cooked. Cut each quesadilla into 4 wedges, and serve.


After cutting each quesadilla, how about adding a dollop of sour cream with some salsa, and a sprinkling of sliced scallions?

Can't believe how easy this recipe is! Perfect the first time. Awesome!

I start with spreading the flour tortilla with crushed garlic (from bottle) then adding crushed red pepper. Sprinkle with Italian seasoning. Next add the cheese. Cover with scallions. Finally add the chicken. I have never tried the canned kind. Generally I will use whatever is left over from a chicken dinner or the small chicken strips you buy in packages. You can also use ham. No need for the oil. Just use the cooking spray. My family loves this!

How about a can of drained chopped green chilies.

I add a little more chicken and a can of FIESTA NACHO CHEESE from Campbells, and some Salsa to this and man is it good. Don't add any water to the FIESTA NACHO CHEESE soup, the Salsa and chicken give you all you need. I also make a few of them at a time and put them in the oven to bake for a few minutes. It's easier than the frying pan when you want a few at once.

we make quesadillas a lot. never fried in oil though, just put in dry skillet and carefully turn when browned. we put a lid on also to make sure the cheese all melts

I think it might be better & have more of the Mexican flavor if a taco seasoning mix were added to the chicken prior to adding the cheese to it. What does anyone else think? - cllM

Anything that adds flavor is good! A good taco seasoning would add to it. I'm an onion nut myself, and although I am not a huge fan of canned meat of any kind - they are trying to keep this recipe quick and simple. Any leftover chicken would do - and putting the meat in a small skillet with some sauteed onion (& maybe some jalapeno?) and adding the seasoning and letting it meld together and be hot when you put it on the tortillas would just zest this right up!!

my son and I both loved this. It was so easy and we made it just like the picture showed. Love the idea that a picture is printed with each recipe.
