Mama always said to eat your veggies. And what better way than in these tasty spinach roll-ups? We pumped up the flavor by adding a Ranch-style dressing mix and a jar of those crunchy little bacon bits.
What You'll Need
- 1 (10-ounce) package frozen chopped spinach, thawed and well drained
- 1 cup mayonnaise
- 1 (8-ounce) container sour cream
- 3 scallions, thinly sliced
- 1 (.4-ounce) envelope Ranch-style dressing mix
- 1 (3-ounce) package bacon bits
- 9 (10-inch) flour tortillas
What to Do
- In a large bowl, combine all ingredients except tortillas; stir well.
- Spread mixture on tortillas, distributing evenly. Roll up jelly roll fashion; wrap each in plastic wrap.
- Chill 4 to 6 hours. Cut into 1/2-inch-thick slices and serve.

I did make this, and they were good - but I cut the recipe in half, and even that was too much! By the time I got around to eating the last of them they were a little soggy. Maybe I just need to get my portions better!! I loved the spinach, ranch and bacon together though!

Hello! - You can get rid of the mayo, sour cream, and ranch mix, and just use any other creamy dressing that you like. There's so many options! - Enjoy!

The tortilla makers of the world are missing a great opportunity here with this million dollar idea. Make em SQUARE for rolling appetizers like this. Round ones mean you waste the sides because they don't roll up nicely with filling.

I would use 8 oz Jalapeno dip in this recipe. Usually I use dip when recipes call for sour cream. I would also use fresh spinach & real bacon. I make spinach dip and use jalapeno sour cream in it, more flavorful.

Hummus can be used as the spread topped with fresh baby greens and some other added veggies such as peppers, cukes, carrots, all sliced uniformly (added on top of hummus) to make the wrap more healthy. Or softened cream cheese with a couple of tablespoons of dry ranch dressing and bacon added can be used as spread too. Besides mayo and sour cream being dense in calories, I think using them could make for a sloppy wrap to eat. There is a tasty spinach/artichoke hummus available.

Hi Lynne! We used frozen spinach in this recipe because we wanted to get a spinach dip consistency, which would allow us to spread and easily roll these up. However, you can certainly use fresh spinach! Combine all of the other ingredients, spread on your tortillas, layer on the spinach leaves, and then roll them up. :) Enjoy!

I made these Rolliups this morning in preparation for a tailgate party tomorrow (Saturday, 8/31/13). Following are my comments with regard to the recipe: 1) there was only enough of the mixture to spread on 5 ten-inch flour tortillas; 2) I have never seen an 8 oz. container of sour cream. The smallest I could find (I live in Central Pennsylvania) was 16 oz.; 3) I could not find a .4 oz. envelope of Ranch style dressing mix. I had to buy a 1 oz. package - the smallest i could find; 4) I could not find a 3 oz. jar of bacon bits. I have run into this problem before when trying to buy ingredients as called for in Mr. Food recipes.

The battle of Miracle Whip (Salad Dressing) vs. Mayonnaise has been on-going for years. It is really just a taste preference. Miracle Whip will give the sandwich a little more acetic flavor than the mayonnaise does. If you don't have mayonnaise in the house use Miracle Whip.
