Welcome friends with these zesty snacks. They're easily made ahead, so when the gang arrives, all you have to do is pull these festive bits out of the fridge for all to enjoy!

What You'll Need

  • 1 (7-ounce) jar roasted red bell peppers
  • 2 cups chopped cooked chicken
  • 1 (8-ounce) package cream cheese, softened
  • 1 (0.4-ounce) package Ranch-style buttermilk dressing mix
  • 1/4 cup chopped ripe olives
  • 1/2 small onion, diced
  • 1 (4.5-ounce) can chopped green chilies, drained
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon black pepper
  • 8 (6-inch) flour tortillas

What to Do

  1. Drain roasted peppers well, pressing between layers of paper towels; chop peppers.
     
  2. Stir together roasted peppers, chicken, and next 7 ingredients. Cover and chill at least 2 hours.
     
  3. Spread mixture evenly over tortillas, and roll up. Cut each roll into 5 slices, securing with wooden toothpicks, if necessary.

These are colorful and tasty looking appetizers. I like the mix of ingredients. I will use fresh red peppers and cilantro from my garden. I think these will make a good work lunch for me. I like a light meal and these will be delicious. I usually make spirals with deli meat, so this is different.

I have a suggestion that will help you roll up these easier. Let your tortillas stand at room temperature before rolling. You'll find they stretch tighter and don't break and tear as easily as when they're cold and stiff.

I put mine in the microwave for a rew seconds. But leaving on the counter is even better.

These are great! I used leftover meat from roasted chicken thighs. I omitted the cilantro because I hate that stuff! Unfortunately didn't have red peppers to add, will do so next time. I rolled it into six low carb tortillas and stuck them in the frig for handy lunches. I'll be making this often for my low carb diet, but I'll locate a good Ranch dressing mix recipe to reduce the unnecessary carbs there. This would be a good spread for crackers or for stuffing celery.

I always used to low-carb tortillas too. I think they taste great and a lot better than the whole wheat tortillas. Nobody in my family likes those.

Would fresh bell peppers work? I have those in my garden!

Absolutely! Just make sure you finely dice them, so they will roll up nicely. Enjoy!

These are delicious! Prepared the salad mix and refrigerated overnight. Definitely keeping this recipe!

Tortillas do not freeze well.

This sounds like a easy one to make ahead of time. I don't think this would freeze well because of the cream cheese. I may be wrong.

We would not recommend freezing these. We have not tried it in the Test Kitchen, so we can not guarantee it would not work. However, we typically don't like to freeze ingredients such as cream cheese in a recipe like this. You can make the filling further in advance and then make the rolls when you are close to serving them. Thank you for your question!

I was actually wondering if the tortillas get soggy if prepared too soon. So therefore,,, I don't think it would do well frozen. A question I have is ,,,,,,, why doesn't Mr Food Com answer these questions especially when it is seen that NOBODY has replied to the question. Mr Food 's site is NOT the only ones GUILTY of this dumb neglect. The Chew is another site that doesn't answer your questions. I guess you have to try it ahead of time before the date u want to defrost YOUR rollups and see how it goes. I HATE to waste money "testing" things out when it is Mr Foods job to inform us of these quite sensible concerns.

With all of the recipes on this site I think it would be near impossible for Mr. Food to have people constantly checking each and every recipe on here to see if someone asked a question.

This is a FREE sight, given to us from the goodness of these peoples' hearts. The recipes come from jackleg cooks just like me. It is NOT Mr. Food's test kitchen workers' JOB to tell us anything. If you don't want to waste money 'testing' things you should get recipes from your friends and 'demand' THEY test them beforehand. What??!! Don't think that would work??!! Mr. Food's people are not going to tell you to kiss them where they can't, but I WILL.
