Dinosaur Ribs

These larger-than-life hearty ribs are not only big on size but on taste, too! Since they bake up in our ovens, we can enjoy them all year 'round, no matter the weather!

What You'll Need:
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 6 to 7 pounds beef back ribs, trimmed and cut into individual ribs
  • 3/4 cup barbecue sauce
What To Do:
  1. Preheat oven to 375 degrees F. Line a large roasting pan with aluminum foil then place a roasting rack in pan. Coat rack with cooking spray.
     
  2. In a small bowl, combine cumin, oregano, thyme, chili powder, garlic powder, and salt; mix well.
     
  3. Rub seasoning mixture evenly over ribs. Place ribs on roasting rack, overlapping them if necessary. Roast uncovered 1 hour.
     
  4. Brush ribs with barbecue sauce and roast, uncovered, 25 to 30 more minutes, or until ribs are tender and cooked through. Serve immediately.
Note

Serve with additional barbecue sauce on the side.

By far the best ribs ever!

Hi Mr. Food Test Kitchen, can you substitute the Beef Back Ribs for Country styled Ribs. If so, is their any change in the recipe

Hi there! Yes, you can use country-style ribs in this recipe. The Test Kitchen believes that roasting the ribs for 30 minutes (uncovered) rather than 60 minutes before finishing (covered) for the recommended 30 minutes. Enjoy!

Hi, Mr. Food. These look great! Where would you suggest to look for these extra big beef ribs? I don't recall ever seeing any thing like these in our local store's meat department?

Hi there! The Test Kitchen says to ask your local butcher about the beef ribs (they may be able to cut them for you) or you can also use the largest beef ribs that you can find. :) Enjoy!
