Two Boys Casserole

Angela, in Texas, has two boys with big appetites for casseroles, so she came up with this recipe for Two Boys Casserole. It combines all of their favorites into one meaty and hearty dish. We bet everyone at the table will be pleased to find the creamy, beefy goodness underneath that layer of crispy potato tots!
What You'll Need
- 2 pounds ground beef
- 1 onion, chopped
- Salt and pepper to taste
- 1 (12-ounce) package frozen peas
- 1 (10-3/4-ounce) can cream of celery soup
- 1/2 cup milk
- 1/4 cup sour cream
- 2 cups shredded Colby Jack cheese, divided
- 1 (30-ounce) package frozen potato tots, thawed
What to Do
- Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large skillet over medium-high heat, cook beef, onion, salt, and pepper until meat is browned. Add peas and stir. Add soup, milk, sour cream, and 1 cup of cheese; stir to combine.
- Place half the potato tots in baking dish, top with meat mixture, then remaining potato tops. Sprinkle with remaining cheese.
- Bake 25 to 35 minutes, or until the potato tots are cooked through and golden.

Should the ground beef be drained after browning and browning and before adding the other ingredients?

Hi there! Depending on what type of beef you use, there might be a lot of liquid. If there is a lot of liquid, then absolutely drain. Enjoy!

The title is really misleading. I get it after I read the information prior to the recipe. I had two boys also and it was always a struggle to keep them feed. I never prepared a recipe like this and I am sorry that I missed out on it. Now that the boys are older, one is a vegan and the other no longer consumes dairy. However if I halved this, me and the hubby would probably enjoy this.

There is never enough ground beef recipes. With the high price of all food now, it is important to prepare meals that you know there will be nothing to call left-overs that typically get trashed. I like all the posts about this recipe. I feel confident in making this.

Years ago, I was in junior high, a friend's mother made a casserole that was really delicious. I asked her for the recipe and it is identical to this one except for two things 1) a 16 ounce bag of frozen green beans and a 32 ounce bag of tots. My mom made this for years and I've been making it for years. With the kids gone, I now halve the recipe. Over the years I've used different cream soups and vegetables and it's always been well liked. The first time I made it with broccoli soup and broccoli, one of the kids renamed it "Hamburger Divan".

I make this as Tater Tot Casserole - have been doing so over 20 years. We need to make it in a 12x18 cake pan. I place 3 lb UNCOOKED ground beef spread out thinly on the bottom and alternate with different cream soups, no milk, no cream cheese although I see no reason why not (will try it) and different veggies like peas, green beans, carrots, cauliflower and/or broccoli. We've even added dried onion soup across the soup and sometimes dried Ranch dressing. Then we layer on cheese (almost any kind, but fav seems to be cheddar) and finally the magic - allowing the kids to line up the tater tots in rows to make it easier to cut out segments. It takes a little more time, but it does have more finesse when put on the table. Nothing is pre-cooked but layered into the pan and then baked for about 40-45 min. Meat has always been cooked, but if you fret about that aspect, use a glass pan to see the meat.

Even with leaving the Peas out and using a Monterey Jack and Colby cheese blend ( that's all I had at the time) it still turned out delicious, Will definetly do this recipe again

We call this Tater Tot Casserole in Oklahoma. When my son and his buddy came home from the Marines, this was the meal they requested. The looks on their faces was enough to know it is a man-pleaser. It is still a favorite of the whole family. I use cream of mushroom mixed with milk, and I add onion soup mix with a bit of water to the meat as it is cooking.

Yes, 2 pounds of ground beef is correct. It's a family-sized casserole, so it's meant to feed up to 6 people. You can definitely try making this recipe with ground turkey if you prefer. We'd love to hear how you like it!

Made this last night and everyone LOVED IT! The pan was so clean it almost looked like I hadn't used it - every last bit was gone! Didn't change a thing - followed recipe exactly as is. Have already added this to my "make again" list, per instructions from my husband and family!

I have been making and still make this recipe almost every 2 weeks for my husband and son and they love it! We make it a bit differently using milk, no sour cream or onion, 2 cans of cream of mushroom soup, shredded Monterey jack and Colby cheese, and frozen broccoli florets. Also used seasoning salt on taters while cooking and it's a winner every time!

I've had this before and it was wonderful. It can be made with any cream-style soup for a different flavor. I will use cream of mushroom when I make this next.

This was pretty good. It needed a bit more seasoning, so I used seasoned salt, minced garlic and onion and garlic powders. I did not care for the potato tops on the bottom. Next time I would not use them just put them on the top.

Hi Linda, I've never used frozen tater tots. I was wondering if you think baking the ones on bottom, to crisp them up a little would help? Just asking your opinion before I make this. Thanks.
