This wholesome homemade apple muffins recipe with walnuts is a welcome addition to your rise 'n' shine routine or as yummy edible gifts. Everybody loves homemade goodies, and these muffins are no exception!

What You'll Need

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 1/2 teaspoon ground cinnamon, divided
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup milk
  • 1 apple, peeled, cored, and finely chopped (about 1 cup)
  • 6 tablespoons butter, melted
  • 1/3 cup chopped walnuts
  • 1/4 cup packed light brown sugar

What to Do

  1. Preheat oven to 375 degree F. Coat a 12-cup muffin tin with cooking spray.
     
  2. In a large bowl, combine flour, granulated sugar, baking powder, 1 teaspoon cinnamon, and the salt; mix well.
     
  3. In a medium bowl, beat eggs with milk. Stir in chopped apple and melted butter. Add apple mixture to flour mixture and stir just until moistened. (Batter will be very stiff.) Fill muffin cups 2/3 full with batter, distributing evenly.
     
  4. Combine walnuts, brown sugar, and remaining cinnamon; mix well. Sprinkle nut mixture evenly over batter.
     
  5. Bake 20 to 25 minutes, or until a toothpick inserted in center comes out clean. Immediately remove from muffin tin. Serve warm.

Really good I used 2 cups apples ...1 cup is not enough (2 large apples is about right) Also For the cook wanting to know about raisins in green tomato pie it is usually 1/2 cup raisins Green tomato pie is popular when the frost is coming we all rush out and pick everything we can in the garden I also make green tomato pickles with dill and sweet tomato pickles taste just like pickles only better

i would like to find a recipe for green tomato pie

4 cups green tomatoes, thinly sliced 2 Tbsp. vinegar 4-5 Tbsp flour 1/2 tsp. cinnamon 1 1/4 cup sugar 1/4 tsp. salt 1/2 tsp nutmeg raisins, optional mix dry ingredients, add vinegar to tomatoes and combine w/dry ingredients. Stir together and put into unbaked crust. Cut slits in top crust and sprinkle with sugar and cinnamon. Bake 425- 1 hr. This is the recipe I have made for 60 yrs. and still get astonished looks when I tell my guest it is not apple pie but green tomatoes.

I noticed on the video clip that Mr. Food said "2 cups" of apples, but the prinhted recipe calls for only 1 cup. which is correct? Sounds like a good recipe, but I'd like to have the correct ingredients before I give it a try.

HOW CAN i PRINT THE APPLE NUT RECEIPE

You could cut and paste it and print that version. That's what I do, if I'm unable to print a recipe.

These were delicious the first day, dry as dirt and went into the garbage the second day.

I think that this is a neat way to use up leftover apples.
