Peanut Butter and Jelly Bread

Peanut butter and jelly is a classic all-American combo, and our Peanut Butter and Jelly Bread will surely delight your family's taste buds. With the flavors they love rolled into a scrumptious, easy-to-make quick bread, this is sure to be a hit!

What You'll Need

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup peanut butter
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup strawberry or raspberry preserves

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
     
  2. In a large bowl, combine flour, sugar, baking powder, and salt. Cut in peanut butter with an electric beater on medium speed, until well combined.
     
  3. Add egg and milk; stir until well blended. Spread half the batter into prepared loaf pan and spoon preserves down center of batter.
     
  4. Top with remaining batter, covering preserves completely. Bake 55 to 60 minutes, or until a toothpick inserted in center comes out clean. Invert onto a wire rack and let cool completely. Slice and serve.

I tried this recipe today and found the batter was very stiff and after baking, the bread was VERY DRY. Tasted o.k., but I would suggest using oil or butter in the batter to make it some thinner and bake less than the 50 minutes. Maybe try 325 degrees at 50 minutes. I am going to make again with some chopped pecans and use at least 1/2 stick of butter for moist bread. Would appreciate it if someone else has tried the recipe, which I followed exactly as posted. Love most of the recipes I have tried and this is the first time I did not really like.

Hello baberjn6681085! Bread batter tends to be more on the stiff side than, let's say, cake batter. For moister bread, we recommend using 1/2 vegetable oil in the batter. That should moisten it right up! Thanks for your feedback, and please let us know how it goes!
