  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 eggs
  • 3/4 cup buttermilk
  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 1 (8-ounce) can crushed pineapple, drained
  • 3 cups shredded raw carrots
  • 1 cup ground pecans
  • Pecan halves for garnish
  •
  • Cream Cheese Frosting
  • 1 (8-ounce) package cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a medium bowl, combine flour, baking soda, salt, and cinnamon; mix well and set aside.
  3. In a large bowl, combine eggs, buttermilk, oil, granulated sugar, and 2 teaspoons vanilla; beat with an electric mixer on low speed. Add pineapple, carrots, and pecans; mix well. Beat in flour mixture until well combined then pour into prepared baking dish.
