This overnight coffee cake recipe is brimming with country-fresh lemon flavor. Just wait'll you taste our Country Lemon Coffee Cake!

What You'll Need

  • 2 cups all-purpose flour, plus extra for sprinkling
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 cup packed brown sugar, divided
  • 2 teaspoons ground cinnamon, divided
  • 3/4 cup (1-1/2 sticks) butter, melted
  • 1 cup milk
  • 1 1/2 teaspoons lemon extract
  • 2 large eggs
  • 1/2 cup chopped pecans
  • Zest of 1 lemon

What to Do

  1. Coat a 9- x 13-inch baking dish with cooking spray, then sprinkle with flour.
     
  2. In a large bowl, combine the 2 cups flour, baking powder, baking soda, salt, granulated sugar, 1/2 cup brown sugar, 1 teaspoon cinnamon, the butter, milk, lemon extract, lemon zest, and eggs; beat until well combined. Pour into prepared baking dish.
     
  3. Cover and chill at least 8 hours, or overnight.
     
  4. Preheat oven to 350 degrees F.
     
  5. In a small bowl, combine remaining brown sugar, remaining cinnamon, and the pecans. Sprinkle over chilled batter.
     
  6. Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Cut, and serve warm.

Does this have to be served warm?

Hi there! When the Test Kitchen originally made this recipe, they served it warm. Everyone enjoyed it that way, however you do not need to serve it warm when you serve it. Enjoy!

Yes, once the first set of ingredients has been combined the cake should be left to chill at least 8 hours.

Why is this called " overnight " cake ???

Because in the recipe is says to chill at least 8 hours or...OVERNIGHT. Thus the name "overnight".

Can I substitute lemon juice for lemon extract and how much?

Hi Maryanna, You cannot substitute lemon juice for lemon extract. These are two different products used in different ways.

What can I substitue for the 1-1/2 sticks of butter? Would 3/4 cup applesauce do it? I am on a low fat diet but I do crave desserts at times. dak_72560@yahoo.com

Yes. Or any other fruit sauce, yogurt, Greek yogurt.
