What You'll Need

  • 2 cups sugar, divided
  • 1 cup all-purpose flour
  • 12 egg whites
  • 1 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice
  • 1 tablespoon grated lemon peel

What to Do

  1. Preheat oven to 375 degree F. In a medium bowl, combine 3/4 cup sugar and the flour; mix well and set aside.

  2. In a large bowl, beat the egg whites, cream of tartar, vanilla, and salt until soft peaks form. Slowly add 3/4 cup sugar and beat until stiff peaks form.

  3. Fold flour mixture gently into egg white mixture until thoroughly combined then pour into an ungreased tube pan.

  4. Bake 35 to 40 minutes, or until top is golden and dry. With cake still in pan, invert pan on a wire rack and allow to cool completely. Remove cooled cake from pan and place on serving plate.

  5. In a small saucepan, bring lemon juice, lemon peel, and remaining 1/2 cup sugar to a boil over medium heat. Boil 2 to 3 minutes, or until sugar is dissolved and glaze is smooth, stirring occasionally. Remove from heat and drizzle over cake just before serving.

This is so good. Espeecially this time of year with fresh strawberries! And i will h Have to disagree with the person using a cake mix, but thats personal preference. And its good to kniw regular flor can be used as I have always used cake flour.

can you use vanilla syrup instead of extract?

We don't recommend substituting vanilla syrup for vanilla extract, since angel food cake is such a delicate cake to work with.

What I would do to make this is use a Angel Food cake mix and when cool continue with number 5 on the recipe . Nice and easy.

This sounds wonderful! I'll be using this in my Trifle for Christmas Dinner. Thank you so much for all you do for us. I'm wishing you all a Merry Christmas, Hanukkah, Kwanzaa, etc. And a very Happy New Year to all! Thank you for carrying on even though your hearts are heavy with the loss of Mr. Ginsburg.
