This Peachy Keen Icebox Cake is just the dessert you need for the summer! It's a no-bake cake made with just five ingredients. With the creamy filling, the graham crackers that soak up all the goodness, and the juicy peaches, get ready for everyone to ask you to make this all summer long!

What You'll Need:
  • 2 (4-serving size) packages instant vanilla pudding mix
  • 3 cups milk
  • 1 (29-ounce) can peach slices, drained, with 1/2 cup liquid reserved
  • 1 (16-ounce) container frozen whipped topping, thawed
  • 12 graham cracker sheets (32 cookies)
What To Do:
  1. In a large bowl, whisk pudding mix, milk, and 1/2 cup reserved peach liquid until slightly thickened. Stir in whipped topping until well combined; set aside.
  2. Lay half the graham crackers in a 9- x 13-inch baking dish. Gently spread one-third pudding mixture over graham crackers. Top with a layer of half the peach slices, and another one-third of pudding mixture. Repeat with another layer of graham crackers, pudding mixture, and peaches.
  3. Refrigerate 4 hours, or until ready to serve.

I would like to try this with broken ginger snaps or another plain cookie.

I would give this a minus 5 if I could. It is the nastiest thing I believe that I have ever made. First, with all that whipped topping and pudding mix, the pan was overflowing with only two layers of the graham crackers. The one can of peaches do not provide enough peaches to even cover the pan with one layer. When you eat it, all you get is a mouth full of soggy crackers and gooey Cool Whip-Pudding. The recipe has already gone in the trash and the cake is going down the garbage disposal.

Would've given this a 5 but it didn't set-up. Can you do something different?

Hi there! The Test Kitchen recommends double checking that your peaches are drained on a paper towel and patted dry. We also recommend using 2 cups of whole milk rather than 3, along with the reserved juice, to get a thicker end product. Finally, we wanted to make sure that you used whole milk and regular frozen whipped topping so that the fat can be used to stabilize this cake. Enjoy!
