We've got a delicious and guilt-free way to enjoy apple coffee cake! This recipe comes from our new diabetic-friendly cookbook, Guilt-Free Comfort Favorites. Don't worry, we're not sacrificing any of the taste. In fact, just one bite, and you're going to be hooked!  Don't be surprised when family and neighbors are lining up outside your kitchen for a taste of our Guilt-Free Apple Lovers' Coffee Cake!

What You'll Need

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar blend
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons (1/4 cup) light trans-fat-free margarine, melted
  • 2 eggs
  • 3 tablespoons fat-free milk
  • 2 tart apples, peeled, cored, and chopped (about 2-1/2 cups)
  •  
  • CINNAMON PECAN TOPPING
  • 1 tablespoon brown sugar blend
  • 1/4 cup chopped pecans
  • 2 tablespoons light trans-fat-free margarine, melted
  • 1/2 teaspoon ground cinnamon

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9-inch round cake pan with cooking spray.
  2. In a large bowl, beat flour, sugar blend, baking powder, 1/2 teaspoon cinnamon, the salt, 4 tablespoons margarine, and the eggs until thoroughly combined. Stir in milk and apples, then spread batter in cake pan.
  3. To make Cinnamon Pecan Topping, in a small bowl, combine topping ingredients; mix well and sprinkle over batter.
  4. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Serve warm or allow to cool, then cover until ready to serve.

I plan on making this for thanksgiving. But I did notice the mention of cinnamon being healthy. I think this is a great time to specify, too much Cassia Cinnamon can lead to health issues but Ceylon Cinnamon is ALWAYS good for you, just do a little research, yourself, and see )

This recipe is right up my alley, I'll eat apples in just about anything. I am a little confused though as to what makes this cake diabetic friendly. Isn't the sugar what you want to avoid if you're diabetic and not the fat...or am I mistaken? And what exactly is a sugar blend? Do you just blend in your preference of sugars together, or do they actually sell sugar called sugar blend? Either way, I think this is going to be amazing...kinda like apple pie meets cake, and that suits just fine!

Pretty sure they are referring to a blend of sugar substitutes and real sugar. Splenda and Truvia make one for brown sugar and for white sugar. You can also mix it yourself. Just check the sweetness of the substitute sweetener. Some are way sweetener than sugar.
