Cheesy Baked Rigatoni

When you're craving a cheesy pasta casserole, this Cheesy Baked Rigatoni recipe will do the trick! This pasta bake features three different kinds of cheese, so you know it's gonna be the ooey-gooey-melty kind of yummy!

What You'll Need

  • 12 ounces rigatoni pasta
  • 1 (15-ounce) container ricotta cheese
  • 1 teaspoon garlic powder
  • 3 cups (12 ounces) shredded mozzarella cheese, divided
  • 1/2 pound mushrooms, sliced
  • 1 (26-ounce) jar spaghetti sauce
  • 1/2 cup grated Parmesan cheese

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
     
  2. Cook rigatoni according to package directions until al dente or firm; drain. Place in a large bowl and add ricotta cheese, garlic powder, 1-1/2 cups mozzarella cheese, and the mushrooms; mix well.
     
  3. Spread 1 cup spaghetti sauce evenly over bottom of baking dish. Spoon rigatoni mixture over sauce, then cover with remaining sauce. Sprinkle with Parmesan cheese.
     
  4. Cover and bake 45 minutes, or until heated through. Uncover and sprinkle with remaining mozzarella cheese and bake 10 more minutes.

BUT I WILL. I also will add Italian sausage, oregano, basil and mixture of Italian spices. I KNOW we will yummy this one!!!!

This recipe really looks delicious. I would saute some minced garilc and chopped onion and also add italian sausage or ground beef...or both. Yum!

This was okay, but Mr. Food's recipe for Stuffed Shells has a lot more flavor.

Amazing!! I didn't have mushrooms, so I skipped them, other than that, followed the recipe exactly. I used home made ricotta. This smelled so amazing while baking! The kids cleaned their plates, that's rare. I will make this over and over again.

Added ground beef and cooked the whole 16oz box of noodles. Made lots of leftovers! Everyone complained that they were to fulll!

This totally looks like the kind of dish I could make during the work week. Looks super easy--can't wait to try it.

I'm heading to the store now to get the ingredients for this to make for dinner tonight. I'm going to add mushrooms, onions and ground beef. We shall see....

For new cooks, boil the macaroni the least-to-middle amount of time mentioned on the box, not the maximum. Then bake. Then it will not "mush" when reheating gently, either, if you expect leftovers. (I use homemade spaghetti sauce when serving from the TOP of the stove, but find I can often substitute with jarred sauce when BAKING...and noone knows.)
