Frontier Chicken and Noodle Casserole

We don't know if Davy Crockett had meals like this, but we're sure he'd have loved it, and your family will, too. Frontier Chicken & Noodle Casserole is robust and delicious, and the simplest dinner you could imagine.

What You'll Need

  • 1 pound cooked boneless, skinless chicken breast halves, cubed
  • 2 celery stalks, chopped
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked fine egg noodles
  • 1/4 cup mayonnaise
  • 1 (10.25-ounce) can cream of chicken soup
  • 1 cup crushed potato chips

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with cooking spray.
     
  2. In a large bowl, combine all ingredients except potato chips; mix well. Spoon mixture into prepared casserole dish and top with crushed chips. 
     
  3. Bake 30 to 35 minutes, or until golden and heated through.

This recipe seemed bland and dry to me. If I were to make it again, I would adjust as follows - mixed the soup (perhaps try cream of celery instead), mayo and spices together along with the additon of 1/4 cup 2% milk to make it creamier. I would coat the chicken and celery with the mixture (along with 1/4 cup of peas to give another level to the flavour) and gently fold in the noodles at the end. (the video shows adding all the ingredients in a different order and omits how to mix) Place mixture in dish and top with potato chips (maybe try smokey bacon to enhance flavour)

Love your recipes, but the hate having to endure that annoying ad for sandwiches before every recipe video.

I made this for supper tonight. The flavor was good, but the dish was too dry. It may need need some milk or another liquid in it.

Very good and easy to make

This was excellent.....tasty, easy quick, very satisfying. Only change was to add an extra breast [small one]. My hubby and I enjoyed it with a nice crunchy salad with Thousand Island dressing and it was the perfect accompaniment. Hubby took the remaining casserole to work the next day-----working OT during our Buffalo NY blizzard! It will keep his tummy nice and warm! This will become a staple! For the other reviewer, I guessed @ 9 oz. of uncooked noodles if you want to go that way as well.

I think this is a great recipe, but the cook time is wrong. You have to cook the chicken and noodles. That time was not entered in the equation. I think it should be incorporated in it, as it's part of the prep time.

I just made this and it was delicious. I cut the recipe in half to make a smaller batch since I cook for myself only. It was easy to do. I think next time I will try adding peas, not because the recipe needs them but because I like peas. I would give this recipe 5 stars.

I like Kraft Mayonaise. I was raised on it and my taste buds say it is the best as far as they are concerned. Dukes is great as well. Miracle whip is okay but not for me. Kraft mayonaise sandwich is good any time and great with cooked chicken. Great recipe and I love casseroles. I am a man and I learned to cook from my mother who is a great cook. I have been told I cook almost as good as her. For me that is the best compliment I can possibley get,as I will never be as good a cook as her. Mr. Cook people keep up the good work and the great recipes.

Can someone tell me the ratio of uncooked pasta to cooked pasta. I didn't read the "cooked" word while preparing. The box doesn't tell me either. It was ok, but dry. Can't eat

2 cups uncooked fine egg noodles equals 2 3/4 cups cooked noodles so just a bit less than 2 cups uncooked

I never liked mayo, can you use Mircle Whip and cook with that?

Miracle Whip is mainly intended for sandwich spreads, and for cold salads such as potato salad, coleslaw, and the like. It does not cook well. Best mayonnaise is Hellman's Real Mayonnaise!

Instead of mayonnaise if you prefer you can use sour cream but salad dressing is not good to cook with it also contains quite a bit of sugar and may cause the taste to go way off some salad dressing also contain corn syrup, I think Hellmans make the best mayonnaise

curious1 what is with the EWWWW? real mayonnaise is healthier and has a cleaner, richer taste That is why it always says on the front label "real mayonnaise" if you want salad dressing go ahead and use it It's is all personal taste but do not put cooks down for using real mayonnaise read your labels and know what you are feeding your family many do not understand why they have diabetes.. Diabetes is at epidemic rates it weakens and kills destroying hearts eyes and vital organs Sugar can be a good thing but everything in moderation they don't not realize all the hidden sugar in ingredients preparing meals

I'd like to add frozen broccoli to it, can I? Can I use thieghs instead of breasts? as they are way too dry for my taste. Mayo is that the same as miracle whip. Sorry i'm new to cooking so I have alot of questions. Thanks for all the help I hope I become a good cook like my mom was.

Dear Half Pint 13, these recipes are just ideas that you can add to or remove from to make it your. Now most cake recipes or bread recipes need to be followed carefully to get the right out come. But you can have fun this one. Love.

Great advice. I alway add peas or so mixed veggies to every casserole.

You can also make this with tuna... and you can omit the mayo for less calories. Lays potato chips are best, but not the ruffle kind. The baked chips are not quite as good, but cuts down on calories... and use whatever kind of noodles you have on hand. I always buy wheat noodles for a heathier kick.

Without the mayonaise this would be very dry especially with skinless boneles chicken breasts it needs some kind of fat for flavor and moistness If u really want to cut calories leave off the potato chips and simply sprinle top with a little parmesan cheese and paprika gives it color and flavor of course the crushed potato chips gives it extra flavor also and has been a topping for chicken and tuna casseroles for many years

Wheat noodles & no mayo seems very tasteless. Seriously, this is a version of a classic egg noodle casserole recipe, including your tuna suggestion. If you are looking to cut calories, lite mayo (not no fat) is wonderful.

I don't think the frontier people had mayonaise.......

yes they did... they made it theselves homemade out of eggs !!!!!
