Satisfying Shepherds Pie

We took a few shortcuts to make this recipe for Satisfying Shepherd's Pie, because we know that sometimes the cravings for shepherd's pie come on suddenly and you have to have it fast! Boy do we love this hearty meat, potato, and veggie casserole.

What You'll Need

  • 1 1/2 pounds ground beef
  • 1 onion, chopped
  • 1 (1.15-ounce) envelope onion soup mix
  • 1 (18-ounce) jar beef gravy
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 (16-ounce) package frozen mixed vegetables, thawed
  • 4 cups prepared mashed potatoes
  • Paprika for sprinkling

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with cooking spray.
  2. In a large skillet, brown ground beef and onion. Drain excess liquid, if necessary. Add soup mix, gravy, garlic powder, and black pepper; mix well. Stir in vegetables.
  3. Place mixture in casserole dish. Spread mashed potatoes over top and sprinkle with paprika.
  4. Bake 30 to 35 minutes, or until heated through.

Notes

  • Did you know that in England this wouldn't be considered Shepherd's Pie? The British call it Cottage Pie, since authentic Shepherd's Pie is actually made with chunks of lamb. It'll be fun to share this bit of trivia when serving up this casserole.

When I made this, I followed the recipe except for.... I replaced the mixed veggies with corn and I topped it with cheese and then sprinkled it with smoked paprika. The smoked paprika blends great with the cheese. I also used Bob Evans Original Mashed Potatoes.

Love that this is topped with mashed potatoes!

I left out the french onion soup mix and just used beef gravy, i let the vegetables simmer in the beef/gravy mixture for about 15 minutes to let them thaw, plus i added cheese to the top, it was a big hit at our house and im making it again tonight.

When I made this, I used 21 ounces of the gravy, as the 18-oz. didn't seem like enough, plus I made my own mashed potatoes, and added an extra cup, cuz I put this in a 4-quart oval baking dish, and the 2-quart didn't look like it would work with this dish. Also, I too used the Birds Eye brand of mixed vegetables, but the video didn't say to thaw the vegetables, but when printing out the recipe, it states to thaw them. I didn't have time to thaw them, so I nuked them in my 900 watt microwave oven for just 6 minutes 30 seconds on 'high'. My husband enjoyed this the first day it was made, but the reheated leftovers were just ok. Not sure if I'll make this again, but if I do, I will cut the recipe down a bit, as this amount is too much for just 2 people.

Well, gee. You use 21 oz. instead of 18, add an extra cup of potatoes and it was just too much for 2 people? Think about it. Maybe it'll all turn out a little better if you "make the recipe" since you don't know exactly what will happen when you doctor it all up and then complain because it didn't taste right or was too much? Go away.

This was awful. I was suspect about the gravy and was right. Go to a more traditional recipe .

No. YOU go to a recipe you can figure out. Duh.

Steve, Get over yourself! One snarky comment is one too many. What would you know about a recipe anyway? We know your wife does all the cooking.
