After a long day most of us don't want to spend extra time in the kitchen. That's where our recipe for Slow Cooked Chicken and Rice comes in. This easy, throw-together, all-in-one dish cooks while you're away, so you can have a complete and satisfying dinner ready when you need it to be.

What You'll Need

  • 1 1/2 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 1/2 cups water
  • 1 (10-3/4-ounce) can condensed broccoli cheese soup
  • 1 medium-sized onion, finely chopped
  • 2 cups broccoli florets (fresh or frozen)
  • 2 (6-ounce) packages wild and long-grain converted rice mix with seasoning packets
  • 2 cups shredded sharp Cheddar cheese

What to Do

  1. In a 4-quart (or larger) slow cooker, combine chicken, water, soup, and onion; mix well. Cover and cook on low setting for 4 hours.
     
  2. Add broccoli and rice; cover and cook for an additional hour.
     
  3. Stir in cheese and serve.

Good "comfort food" recipe.

I made this last weekend. I forgot to buy an onion, so I added onion powder and additional broccoli. I also added some additional cheese. It was very good. I brought some in for a coworker, and she liked it also. I wanted some additional crunch, so before serving I crumbled some crackers on the top, and that added a nice touch.

We are deaf family and We can't hear anything on Video so, please add new closed captional for deaf people.

So sorry, but as I always do I follow the recipe the first time to the T. Unfortunately I won't try it again., even with any tweaking. My husband and I had 1 serving which we didn't finish, and I threw the rest away. I know every body has different taste opinions, and this is just ours.

Turned out to be not what my husband and I appreciated. I made this exactly to the recipe given, and it just didin't have the texture or flavor we were looking for. Sorry

do you have to cook rice first, or just mix it with the seasoning mix that VODIKA gave out, and add uncooked rice and mixture in?

You do not cook the rice first, you add it uncooked. The liquid in the recipe will cook the rice. Thank you for your question!

Ya know if you have to precook stuff, i.e. the meat, it kinda defeats the purpose of the slow cooker from my perspective. I usually put chicken in frozen and ground beef I just crumble it in raw. It always turns out just fine and I use my slow cooker at least once or twice a week.

Does anyone have a recipe for homemade broccoli cheese soup? This sounds so yummy I want to try it?

The only problem with Valentine Lady's recipe is that the soup is not condensed. You'll need to cut the liquid in half to substitute for the Mr. Food recipe. I try to make all my condensed soups and it only takes a couple of minutes. In the case of this recipe, you could probably just add those ingredients in with the recipe itself and it'll cook fine.

I also add sliced water chestnuts and sliced mushrooms, and a little worchestershire sauce. Add broccolli towards the end. Keep an eye on it and when rice is done, turn off

THIS RECIPE SOUNDS LIKE IT WOULD BE VERY GOOD. I HAVE A QUESTION FOR ANYONE......I WAS GIVEN A PACKAGE OF WILD RICE, BUT THERE WAS NO SEASONING PACKAGE WITH IT. CAN YOU PURCHASE THE SEASONING SEPARATELY? I SHOP AT KROGERS, AND THEY DID NOT HAVE A SEASONING PACKAGE FOR RICE. IF THEY DON'T SELL A PACKAGE OF RICE SEASONING, WHAT WOULD THE INGREDIENTS BE, SO I CAN MAKE IT MYSELF. THANK YOU.

If you are not able to buy a season packet ( I have not seen them), just use 2 chicken boulion cubs, 1 Tbls of dried parsley, 1 Tbles of dried Thyme, 1/4 teasp nutmeg(freshly ground)about 4 or 5 swipes on the rasp, 1/4 teasp celery seed, 1/4 teasp galic powder, 1/4 teasp onion powderand 1/4 teasp of fennel seed, and adjust any of them to your tast

I think the Uncle Ben's Long Grain and Wild Rice is what they are referring to.....should think you can find it in any grocery store. Comes in 6 oz. box. I use it to make baked pheasant, wonderful!

I'm new with crock pots. Do you need to pre cook chicken or just toss it in there? Thank you

I like to start by browning the meat in a skillet then cut it into cubs you don't have to cook it all the way through just put a seer on it for looks, your slow cooker wont do this and we all know we eat with our eyes first and browned meat looks better than a white boiled meat anyday.

The test kitchen stated that it revised a new version of slow cooked chicken and rice,where is it?

Do you actually use the seasoning packets or just the rice? If so, I assume they go in with the rice. Thanks!

This recipe sounded promising, but it turned out to be a salty, gloppy mess.

I made this strictly according to the recipe. It has all the makings of a wonderful meal, except that it cooked too long. The broccoli altogether disappeared in the process, and the rice got mushy. I have to wonder if the recipe really was tested as printed. Cubed chicken should not take that long to cook; neither should the rice. And the broccoli needs only to be cooked or thawed in the process. It is such an appealing dish that I would like to see a revised, corrected version that produces a properly prepared product. Thank you.

Just looking at the ingredients, I see this is a bit pricey for a slow cooker dish. Till you buy the soup and 2 packs of rice and the Velveeta, not to mention the chicken-- you'll have enough tied into it to buy a frozen crock-pot meal.

No mention of Velveeta that I can see. Unless it's been changed.

It had too much rice for the amount of liquid. needs more flavor. I used chicken broth instead of water.

I really liked this slow cooker recipe, made just half and it was lots for 4 people. The broccoli was overcooked so I would add it later next time or cook it separately. The rice was not mushy at all. Bonnie

THIS WAS A WASTE OF MONEY AND TIME.. NOTHING BUT MUSH.....

I did not like this recipe, the rice was too mushy, and you said 6 to 8 hours and mine was overdone in 5 hours. It needs something too bland.

YUM!! I added some bacon bites and an tablespoon of basil! This was a delight to prepare because it was a 1,2,3 meal. :)
