What You'll Need

  • 1 (32-ounce) bag frozen diced potatoes
  • 4 tablespoons (1/2 stick) butter, melted
  • 2 (9-ounce) boxes frozen creamed spinach, thawed
  • 3/4 cup milk
  • 1 (6.4-ounce) box frozen brown 'n' serve sausage links, cut into 1/2-inch pieces
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese

What to Do

  1. Preheat oven to 400 degrees F. Coat a 3-1/2-quart casserole dish or 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine all ingredients except Parmesan cheese; mix well. Pour into casserole dish and sprinkle with Parmesan cheese.
  3. Bake 55 to 60 minutes, or until heated through.

This sounds really good. Anything involving the trifecta of sausage, potatoes, and spinach is good with me. Add in some cheese and I'm in foodie heaven. This is a great recipe to turn to during these busy days leading up to the holidays, since time is often short and a quick to prepare meal is great to have on hand. Along with the Parmesan, I'd definitely add some additional cheese to the top. Either cheddar or colby jack would be a good topping to this.
