No-Bake Eggnog Cheesecake

Save this recipe for the holidays, 'cause when your oven is full of roasted turkey or glazed ham and all the trimmings, it's good to have a no bake cheesecake recipe on hand! Your whole family is going to love this No-Bake Eggnog Cheesecake!

What You'll Need

  • 3/4 cup graham cracker crumbs
  • 1/2 cup sugar, divided
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup ( stick) butter, melted
  • 1 (0.25 ounces) envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 (8 ounces) package cream cheese, softened
  • 1 cup eggnog
  • 1 cup ( pint) heavy cream

What to Do

  1. In small bowl, combine graham cracker crumbs, 1/4 cup sugar, nutmeg, and butter; mix well. Press into bottom of 8-inch-square baking dish; set aside.
     
  2. In small saucepan, combine gelatin and water; stir over low heat 3 to 4 minutes, until dissolved. Remove from heat; set aside.
     
  3. In large bowl, with an electric beater on medium speed, beat cream cheese and the remaining 1/4 cup sugar until well blended. Stir in dissolved gelatin and eggnog until well blended. Refrigerate 8 to 10 minutes, until slightly thickened.
     
  4. In a medium-sized bowl, whip cream. Fold whipped cream into eggnog mixture, then pour over prepared crust, cover, and chill 3 to 4 hours before serving.
     

Notes

For an extra-special holiday look, sprinkle the top with some additional nutmeg.

Isn't a stick of butter 1/2 cup?

Oops forgot to add that I also used some rum extract in the gelatin/water mixture... (maybe 1/2 tsp or so)

Made this for an office party and it was gone in no time with rave reviews. Next time though, I will use a little more butter in the crust mixture. I doubled the recipe for a 9x13 pan and the crust was a little too crumbly. Other than that it was awesome!!!

I have made this twice and enjoyed it thoroughly! Since eggnog is out of season now I am going to try it again using blueberry puree in place of the eggnog; hope it tastes as good as it sounds!

I am going to make this on the weekend and want to switch up the water for rum! That would make this yum yum! Will let you know how it turns out!

to make eggnog cheesecake with eggnog would be like making a banana split without bananas Daaaaaaaaa!!

I love this recipe it is so easy to make and goes well at family reunions.

Made this last Sunday. My family loved it. Daughter requested I make another to bring for Christmas dinner. I drizzled carmal topping over each slice adding another dimension to the taste. I will be using this recipe next year for Thanksgiving too.

I want to make this but I don't want to use the eggnog. What could I use as a substitute?

This is a great recipe. If you don't use eggnog then you have defeated the whole purpose of the cheesecake. So why bother? There are plenty of other cheesecakes to make!

I cup half& half cream and 1 t vanilla will replace the eggnog if you want you can add a 1/4 teaspoon or whatver combination you like of cinnamon nutmeg and cloves

I would say go for it! I make cookies and desserts all the time and whenever I don't have something I just leave it out or add other stuff in this case I would recomend adding all spice and/or cloves. I generally will put cinnamon in as well but spice and cloves have less sweetness and more spicyness to them. Hope that helps!

I think I'll make this but don't like the nutmeg flavoring. Do you think cinnamon would work?

I generally use cinnamon in these type of recipes. In fact, I use a bit more than they say to use. We like the taste of cinnamon. Hope it works well! Blessings!
