Chicken Thighs Cacciatore

Chicken thighs have to be one of the best values at our meat counter. Team them with saucy Italian flavors and a bit of red wine, and get ready for some really good eating. Don't forget the crusty bread for dunking!

What You'll Need

  • 8 chicken thighs, skinned, if desired
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry red wine or beef broth
  • 2 (14-1/2-ounce) cans Italian-style diced tomatoes, undrained

What to Do

  1. Season chicken with salt and pepper. In a large deep skillet, cook chicken in 1 tablespoon oil over medium-high heat for 3 minutes per side, or until lightly browned. Remove from skillet and set aside.
     
  2. Add remaining 1 tablespoon oil to skillet then saute onion and garlic until tender.
     
  3. Return chicken to skillet; add wine and tomatoes, and bring to a boil. Cover, reduce heat to low, and simmer 10 minutes. Uncover and simmer 10 more minutes then serve topped with sauce.

I made this last week. Only two of us so only two thighs. I cut the other ingredients in half. Turned out great. Served the sauce over hot cooked rice. Next time over medium noodles. We both liked it. I did skin the thighs. Don't like the skin unless it's crispy. Thanks Mr. Food.

Family liked it, but my thighs were big and needed much longer for cooking.

Hubby like this. I added a half tsp. salt and some minute rice. The tomatoes were quite acidy. I think I would add a bit of sugar after tasting next time. Will do again.

This is a lot like mine, but I like to add red and/or green peppers as well. A tablespoon or two of tomato paste will thicken up the sauce a bit and add to the flavour.

So delicious, my boyfriend loved it and he doesn't even like tomatoes!

I wonder if you could add zucchini and yellow neck squash to this recipe to make it a meal. With the wine/broth and the tomatoes there should be enough juices to make a great sauce. Serve with pasta or rice to complete the meal. I love the crockpot idea.

Good, Quick, and easy!

I make this at least twice a month....I love chicken in sauce, with wine.....from my own experience, it is not necessary to brown or saute anything! Just put ingredients in slo-cooker, and forget about it! If I have them on hand, I add mushrooms, too!!

i think I like Your way better. We Love mushrooms, and i Love "Slow cooking'! one question, do you put this all together from the beginning? and how many hours to cook it, and on what Temp, low or high? guess that was 3 questions, huh/

I'll try this tomorrow. My husband loves tomatoes, chicken, and onions, so how could it not be a big success. Serve it with a side of rice pilaf and the vegetable of your choice, a slice of bread, or better yet - a homemade roll, and you have a superb dinner.
