Chicken and Rice is a tasty duo in our kitchen that we can always count on...and now it's tastier than ever.

What You'll Need

  • 1 (10 ¾-ounce) can condensed cream of celery soup
  • 2 cups water
  • 1 cup uncooked long-grain parboiled white rice (See Note)
  • 1 (4-ounce) can sliced mushrooms, drained
  • 2 scallions, thinly sliced
  • 1/2 teaspoon black pepper
  • 4 whole chicken leg-thigh quarters, cut in half and skin removed (See Note)
  • 1 (1-ounce) envelope dry onion soup mix

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a 9- x 13-inch baking dish, combine soup, water, rice, mushrooms, scallions, and pepper; mix well. Place chicken over soup mixture and sprinkle with soup mix.
     
  3. Cover and bake 65 to 70 minutes, or until no pink remains in chicken and juices run clear.
     

Notes

  • Long-grain parboiled white rice, also known as Converted rice, can usually be found in the supermarket rice section. A whole cut-up chicken, chicken thighs, legs, or even chicken breast can be used here...whatever is your favorite part.

Would this work with boneless skinless chicken breasts?

Hi there! This won't work with boneless skinless chicken breasts. The chicken breasts would be overcooked before the rice is done.

Made this for supper tonight. It was very easy to make and the family loved it.

Tried it for supper tonight and family loved it.

I'm going to try this in a crockpot and hope it comes out.

First time I made it I followed the recipe. Next time it was so hot that day, so icook it on top of stove brown chicken 1st then added tthe rest of ingredients plus some broccoli cooked until rice was tender. it was great my family loved it. Didn't too long to cook only about 30 mins.

I've made something like this for years, using cream of mushroom soup, a bag of frozen vegetables and garlic/herb soup mix instead of french onion.

I'm really going to make this recipe but will try it with mushroom soup instead

I did make this as I said in my previous comment..It was wonderful and I put grated monterey jack cheese over the top the last 10 min..It was so yummy,we will have this often.I found you can add what ever you want and it adds so much more flavor. I also used brown rice... I always put my touch on recipes,hubby says I kick em up a notch !!!!!!

I am cooking this now,will post results after we eat it.I did add fresh celery,red bell pepper and fresh musrooms.So we will see what happens .Also i didn't have the onion soup so i added a beef bullion cube and more onions...
