Chicken 'n' Rice Dinner

Looking for a new go-to recipe? Look no further because this Chicken 'n' Rice Dinner is a one-dish slow-cooker wonder.

What You'll Need

  • 5 large skinned and boned chicken breasts (about 9 ounces each)
  • 1 3/4 cups chicken broth
  • 1 (10-3/4-ounce) can cream of chicken soup, undiluted
  • 1 (4.5-ounce) can chopped green chilies, undrained
  • 1 medium-sized onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 cups Warm cooked rice

What to Do

  1. Place chicken in a 5- to 6-quart slow cooker. Stir together broth and next 5 ingredients in a medium bowl; pour over chicken.

  2. Cover and cook on HIGH setting 1 hour; reduce heat to LOW setting, and cook 5 hours. Serve chicken and sauce over rice.

Note

To enhance the flavor of rice, toast uncooked rice in vegetable oil until light golden; then continue cooking the rice as directed on package. Toasting gives it a nutty flavor.

The Cook Time says 5 hours but in the directions, it says to "Cover and cook on HIGH setting 1 hour reduce heat to LOW setting, and cook 5 hours." I'm no expert in math, but I think 1 hour 5 hours = 6 hours.

It took out my "plus" sign -- 1 hour PLUS 5 hours equals 6 hours

I didn't find this to be anything special. The sauce was way to watery and didn't have much flavor at all.

I made this today, but omitted the salt and got low sodium broth snd soup. I also cooked the rice in half chicken broth and half water. I used boneless skinless chicken tenders, and it was great. Am going to try toasting the rice next time. I was just too busy today.

I plan to do the same thing cooking this except to use boneless skinless chicken breasts tho we do use tenders, too. Also use Healthy Request chicken soup. We do not use salt nor high sodium foods, neither.

how MUCH warm rice? Come one people! this is a recipe I need amounts. I am not a chef but a rank amateur! thanks, brown rice okay?

Depends on how many people your feeding. The rice does not go in the recipe. You serve the dinner over the rice. Use any rice you like.

As much rice as you want. Your question is like asking how much salt. None for me thank you. Amounts are guidelines. I never measure anything.

Can you sunstitute different parts of chicken? Can you make this dish with low sodium soup & substitute Brown rice?
