For those times when you want to make your gang feel special anytime, or if you're having a dinner party; our easy yet elegant Company Chicken recipe is one of our Test Kitchen Favorites.

What You'll Need

  • 1/2 cup seasoned bread crumbs
  • 4 boneless, skinless chicken breast halves, slightly flattened (about 1-1/2 pounds)
  • 4 thin slices Muenster cheese
  • 1/4 cup dry white wine

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. Place bread crumbs in shallow dish and add chicken, turning to coat well. Place chicken in prepared baking dish.
  3. Bake chicken 15 minutes, then remove from oven and top each piece with slice of cheese; pour wine evenly over top.
  4. Bake an additional 8 to 10 minutes, or until no pink remains in chicken and cheese is bubbly and light brown.

I made this for dinner tonight and it was really delicious. I especially liked the meunster and wine combination. I served rice and a veggie on the side. It tasted like company was coming over. Ha Ha Ha...

I have made this several times over the years, and have always received lots of compliments on how good it is. The chicken is always moist and tender, and the flavor is wonderful. I never use any wine to cook with that I wouldn't drink on its own. If you don't want to use wine, you might try using white grape juice instead. I've used it in this recipe with really good results. I've also used a good white wine with wonderful results. I love how quick and easy it is, too.

When it comes to cooking wine, forget it. I once made a dish with cooking wine and we couldn't even eat it. Honestly, the dog wouldn't even eat it - that sure says something about cooking wine. Yuk!

If you're not a wine drinker, but need it for recipes, freeze it in ice cube trays. One cube equals about an ounce. You will want to use a wine with a lower alcohol percentage to freeze better.

It's sounds good except for the cheese. Some people don't mix dairy and meat.

Just wanted to say thanks to all for the often they make the adaption of the receipe very helpful. I especially appreciated the comment about the dry vermouth because I have had many dishes I cooked ruined with cooking wine that tasted acky..I don't know how to choose a wine because I don't enjoy wine at all to drink. I don't like the taste and even one glass will make my tummy swirl and feel hot. I stick to a good mixed drink that is made not too heavy on the liquor and enjoy that. I realize that the wine makes the meat much more flavorful and juicy so I will sure try the vermouth. Thanks again to all for their tips following ALL receipes on Mr. Food. Keep them coming.

For those who don't like cooking with wine,try evaporating most of the alcohol by putting the wine in a pan on the stove,turn the heat on high for a few minutes for a small amount like this recipe,then add to the recipe. Never use cooking wine,it is all terrible tasting.bon apptit!

Try using the cooking wine in the oil and seasoning aisle. I never open a bottle of wine for a few tablespoons. Using cooking wine makes it so much easier.

Cooking wine is very high in sodium. Salt is added to low quality wine so that it can not be considered an alcoholic beverage and can be sold with regular foods. That added salt will alter a recipe, sodium content and taste-wise.

We tried this dish and it was delicious and my husband said I could make it again anytime. The chicken was moist and tender, and the wine set it off.Cheese is always good in chicken dishes. I always use dry vermouth because we don't drink, so I don't waste wine, and it has a screw on lid so no air gets in it. I made the mistake of buying cooking wine one time and it didn't taste good. Dry vermouth always works well with any dish using white wine. Thank you and your staff for a great recipe that is fast and easy.

Thanks; nice to know I can use vermouth in this. I agree with you on cooking wine. Cooking wine is the dregs loaded w/salt so that it doesn't have to pay alcohol taxes. If you want good food, good wine is a must....or leave it out altogether.

You can substitute dry stuffing mix for seasoned bread crumbs, just grind or crush in a processor. Substitute wine with chicken broth if you want.

I found out the hard way that "cooking wine" purchased from the supermarket leaves an after taste that spoils the dish. USE WHAT YOU WOULD DRINK!!!. I am a non drinker and must buy wine for recipe use. This can be costly, as what is left in the bottle often AGES, prior to be discarded, as no one in my household consumes alcohol. I found a replacement however, when white wine is needed for a chicken dish. The brand COLLEGE INN has a "culinary broth" which is chicken broth, Chablis with Thyme, Rosemary and Oregano. May be seasonal, as it was found at Publix during the Christmas season. Good Stuff!!. Makes plain baked chicken a work of art. Try it.

You can purchase wine in 4-packs with individual bottles @ the grocery store or convenience store here in Texas.

Would that work just as well without the cheese? I have to make changes to your recipes to keep them kosher.

I think any dish without cheese is fine. I like cheese myself but when you have to make it and someone else doesn't eat cheese, you have to make that person happy and substitute or leave that one ingredient out.There is so much other flavors that you won't miss the cheese.

Go to your local grocery store and purchase a bottle of cooking wine. The percentage of alcohol in cooking wine is so low, it is almost non-existant but you will achieve the desired flavor that the wine provides. Cooking wine comes in white, red, sherry and marsala.

Cooking wine in the grocery store is not a good sub. for real wine. It has spices etc that can adversely affect the taste of the recipe and I guarantee you will be disappointed in the end result. Just buy the smallest bottle of wine that is for drinking, and know that any alcohol will cook off with only the flavor remaining to enhance the dish.

You can always use chichen broth in place of the wine or beef broth if you are making a beff dish, or even a vegetable broth. I do that if I don't have wine or I want a different taste.
