Country French Chicken

Country French Chicken takes your taste buds to the French countryside when you prepare this flavor-packed recipe for whole chicken and veggies that roast to tender perfection with white wine and fresh herbs.
What You'll Need
- 2 small onions, cut into quarters, divided
- 1 cup parsley sprigs, washed
- 1 (4- to 5-pound) whole chicken
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried leaf thyme
- 1/3 cup white wine (optional)
- 6 small red potatoes, cut in half
- 8 ounces baby carrots
What to Do

Soak a clay cooking pot and lid in water for 10 to 15 minutes. (See Note)

Place half the onion quarters and the parsley in cavity of chicken. Tie the legs together with string and place in pot. Evenly sprinkle chicken with salt, pepper, and thyme. Add wine, if desired, potatoes, carrots, and remaining onion pieces around chicken. Cover pot with lid and place in cold oven.
- Bake at 450 degrees F for 90 minutes, or until chicken is no longer pink in center. Carefully remove lid from pot and continue cooking 10 to 15 more minutes for a crisper chicken.
Note

No clay pot? No problem! Simply use a heavy ceramic baking dish and cover it with foil.
- Serve this up with a side of our cheesy Scalloped Potatoes!

Each time I make it, it is better and better with little adjustments. I do add more carrots and potatoes then the recipe calls for.

What did you do to the website?!? Just last week I could print the recipes without all the excess junk like "more from around the web" , "download coupons", "download a healthier food plan" and 'healthier recipes". I don't want all the extras in my printout of a recipe. Before the change I could usually print out a recipe on one page of 8 1/2" x 11" paper. Now it takes two because of the added 10 to 20+ lines of printable space used on my paper. If the Mr Food website wants to include some of the healthier tips and tricks then add them to the notes. My recipe notebook is not the place to have excess website options or downloadable coupons or any food plans, etc. My notebook collection of recipes is not connected to my computer or any internet. It's a notebook of recipes I like and want to try from the Mr Food website. Please, Please put the print function of the website back the way it was. Thank you!!! I can't even get the "copy" and "paste" option to work in Word from the Mr Food website. I thought that might be a work-around but it doesn't work, since I can't get the picture of the recipe. If this problem isn't corrected I'll just not come to the Mr Food website anymore.

Does anyone have an original recipe for Cassoulet. It's a French peasant dish. Made in the early morning and dropped off at the bakers on their way to work and it cooked all day. Top of caserole dish was covered with a crude pastry that was discarded after cooking. It had sausages, pork, chicken, duck and more and beans, potatoes etc in the cassoulet dish. So does anyone have an original recipe? judgarwood@rocketmail.com

Look up the cassoulet recipe in Julia Childs's French cookbook. I haven't tried it; but it should be authentic and good.
