Our Carrot Cake Cookies are the perfect treat for your little bunnies Easter baskets! Plus, we've added something to make it extra sweet for them--pineapple! Whether you whip this up for Easter, as an after school snack, or just as a special treat for yourself, we know you're going to love our Carrot Cake Cookies! 

What You'll Need

  • 1 (18-ounce) package carrot cake mix
  • 1 (8-ounce) can crushed pineapple, drained
  • 3/4 cup raisins
  • 1 cup finely shredded carrots
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 cup chopped walnuts

What to Do

  1. Preheat oven to 350 degrees F. Coat baking sheets with cooking spray.
  2. In a large bowl, combine cake mix, pineapple, raisins, carrots, eggs, and oil; beat 2 to 3 minutes or until thoroughly mixed. Stir in walnuts. Using a cookie scoop or teaspoon, drop mixture 1-inch apart onto baking sheets.
  3. Bake 12 to 15 minutes or until edges are golden. Remove to a wire rack to cool.

This is a great recipe. I sandwich two together with cream cheese frosting for Carrot Cake Whoopie Pies.

I made these for our small town bingo group. They were a big hit. I could only find a 15.25 oz. box of Carrot cake mix. It worked o.k. I used walnuts instead of pecans I also made my frosting using 1/2 cube butter, 8 oz. cream cheese, 2 cups powdered sugar, & vanilla. They were sooooo good!!!

These cookies are fantastic! I have made them several times in the past couple of years.. I add 1/2 c shredded coconut and some golden raisins. Spice cake mix works well also if you don't have carrot cake. - just add more carrots. I agree, actual measuremnts shoudl be part of any recipe - not just 2 shredded carrots . Sizes vary. Using a food processor to shred them is the way to go.

I use the baby carrots instead, I like the taste better

Try Jr. baby food carrots instead of grating them.

instead of shredding them you might be able to peel them, cut off the fat end and put them in a small food processor!

C"mon people!!! Just shred 2 regular size carrots---it's that easy.

i was wondering the same thing. is it big carrots, medium carrots or what?LOL and what exactly does 'finely shredded' mean? goodness, a little more detail would be great here.

Graters, and processors, have different sized blades. Use a smaller hole to make a "finer" shred so the carrot cooks while the cookie does. I have been cooking for 60 years and taught my sons to cook from the time they were little. Not everyone had that experience. Making impatient, or even rude remarks, to people who have questions doesn't help them or you.

What does "2 shredded carrots" mean? Has anyone made these cookies & come up with an amount that works? I'm guessing 1/2 cup....
