Italian Cream "Mug" Cakes

Why bake a whole cake if you only want a few portions at a time? Our awesome idea for a microwaveable cake in a mug will solve that dilemma instantly! Give our yummy Italian Cream "Mug" Cakes a try and enjoy!
What You'll Need
- Cake Mix
- 1 (15.25-ounce) package white cake mix
- 1 (4-serving) package instant vanilla pudding mix
- 1 cup flaked sweetened coconut
- 3/4 cup chopped pecans
- Glaze
- 3 cups confectioners' sugar
What to Do
- In a large bowl, combine dry cake and pudding mixes; blend well with a whisk. Stir in coconut and pecans.
- Divide cake mix evenly into 8 small plastic bags, about 1/2 cup each; seal and label "Cake Mix." Do the same with confectioners’ sugar, packing about 1/3 cup mix in each bag; seal and label "Glaze Mix."
- To make an individual microwave Italian Cream “Mug” Cake, spray the inside of a microwave-safe mug generously with cooking spray. Pour prepared bag of cake mix into mug. Add 1 egg, 1 tablespoon vegetable oil, and 1 tablespoon milk. Mix until all ingredients are combined. Microwave at 100% power for 2 minutes. Meanwhile, place prepared bag of glaze mix in a small bowl and add 1-1/2 teaspoons milk; mix well then pour glaze over mug cake immediately after removing it from microwave. Serve cake warm in the mug.

18.25 ounce size boxed cake mixes are no longer available from any manufactuer. Size now is 16.+ ounce. how do I adjust above recipe for this size, please?

2 ounces less is not going to make a huge difference in how the cake turns out. 16 ounces is 10% less, but you can use an 8" round pan instead of a 9". Using an entire egg for each 2.28 oz of mix (1/8 of 18.25 box) seems a bit much. Eggs add structure that holds the gasses which make the batter rise, but too many eggs will make a cake tough. I think it would be better to split this recipe into no more than quarters, and simply make 2 mug cakes at one time.

You can eliminate adding eggs altogether, by doubling the recipe with one simple change. For the cake mix, use one box white cake mix and one box angelfood cake mix. You don't need to separate the mix into small bags, either. Just put everything into one large bag and measure out as you use. Keep the bag in the freezer and it will last for several months. Measure your powdered sugar as you need it, as well.

This sounds really good except for the coconut. If I left it out would that make a big difference? Could I add something else?

The coconut doesn't change the cake much. Coconut is moist, so doesn't absorb much of the wet ingredients. You could switch it out with raisins, or dried cranberries with little change, though I would start with 1/2 of cup of any other ingredient. Wet additives, such as preserves, jam or jelly would change the dynamics of the batter.

As a Kindergarten teacher, my students enjoyed making these as gifts for Christmas and Mother's Day. The children each brought in a special mug, mixed the cake mix and pudding , measured (math lesson), and packaged their gifts for mom. Moms enjoyed a special, easy treat from their children.

i think you can make this as a cake -just use all the ingredients mentined and bake it at 350 degrees . it comes out as a coffee cake.

Cant wait to try this I think instead of emptying the "glaze mix" baggie into a dish to mix I think I will just mix it up right in the baggie then snip one of the corners of the baggie off to apply the glaze less clean up that way too!

Cut the calories and fat and still have a delicious dessert! Just use 3-4 tablespoons water and eliminate the egg and oil. Only bake about 1 min. or a little more. I do this all the time and it is fabulous! I also take any regular cake mix, measure 1/4 c. mix into mug, stir in 2 tablespoons water, and microwave for 30 seconds. Yummy! The cake cooks nicely.

The others are asking so thought I would respond. I would use a 12 oz mug...as I know the cake will rise and want to have room for the frosting/glaze. I love this recipe and idea for gift giving in a coffee basket
