Rise 'n' Shine Omelet Cups

This "no skillet required" easy personal portion version is a super way to make everyone's eggs all at once. Our mini Rise 'n' Shine Omelet Cups are sure to be a tasty hit, and the cook will love the all-in-one convenience.
What You'll Need:
- 5 eggs
- 1/2 cup chopped cooked ham
- 1/2 cup shredded Cheddar cheese
- 1/4 cup sliced scallions
What To Do:
- Preheat oven to 350 degrees F. Coat 6 muffin cups with cooking spray.
- In a large bowl, combine all ingredients; mix well then spoon into prepared muffin cups.
- Bake 20 to 25 minutes, or until eggs are set. Serve immediately.

I'm a little shocked at how easy this looks--only 4 ingredients! I could see myself making these as a breakfast-for-dinner to grab on my way out the door.

I used frozen shredded potatoes that were thawed to line the muffin tins - baked for 10 mins, let cool and the poured the egg mixture in and then baked as the directions for this recipe stated, but checked them with a toothpick 5 mins before the full time was up to make sure they didn't over cook.

Ok., I made this for (1) as I am a widow. I used a small casserole, and lined it with croutons after spraying. It slipped out easily, had no 'brown' sides, and was just lovely! The neat thing is you can vary the cheese, the meat, even the veggies, if you so desire! Yum!

it is egg mixture but i use rectangle crescent from tube and press in sprayed cups bake for 5 mins then add egg mixture continue to bake but cook on high level of oven to prevent burning

I think the reason I and others are questioning what was used to line the muffin tin is because in the picture there is a definite demarcation between the outer "cup" and the inner egg. I expect to see some continuity between the inner and outer egg at the top edge of the muffin. That is, there should be some crustiness between the very crisp part touching the muffin pan and the top of the omelet. A non-stick pan would produce a crispier, darker bottom, but there should still be some browning on the top edge.

No you didn't! A biscuit in the bottom would expand and push the egg mixture out of the muffin tin. The eggs would then burn, smoke, and form a charred crust on oven floor.

Zoumonkie, I can find no tag that this recipe belongs to sherry. I can see how a biscuit rolled thin might work as a liner. Yes, it would rise, but not as much. Your rather arrogant dismissal was uncalled for.

It is not a cup made out of a muffin, it is the well (cup) of your muffin tin that you are filling. The tin is "prepared" by spraying it with non-stick cooking spray. Hope this helps.

I need to double or possibly triple the recipe to take to a meeting. Can these be made ahead, baked, and then reheated before taking them somewhere? Or, can they be made up the night before, placed uncooked in the muffin pans, and then baked the next morning?

I have made egg in a mug, using the refrigerated egg substitute, adding cream cheese or cheddar, and any other ingredients you like. Microwave 1 minute, stir, and microwave in 15 second increments until it's the desired consistency. Be sure to spray the mug well with oil.

I will definitely try this but will share an easy one for you that turns out great. top of the stove boil in water in sealable baggie. 2 eggs bacon bits, or ham cubes 1/2 c. shredded cheese 1 green onion chopped put in bag and seal, then knead it to mix. Boil in water on top of stove exactly 13 min. It rolls out perfect on plate when done, then you can add cheese or salsa or whatever to top of it and enjoy.

I love my egg cups, and made them adaptable to what I have on hand. Since it's usually just me, I use a small oven proof dish - like a miniature souffle dish. Spray dish, line with sliced ham, then I add one egg, cheese and salsa in whatever order floats your boat. I like this method when I want the yolk a bit runny! Whatever ingredients you use, this is a nice method.
