Sunday Leg of Lamb

Lamb is popular in so many regions of the world, from India to Greece, Italy, and France, the Middle East, and New Zealand. Now it sure can be popular at your table, since our way is so simple!
What You'll Need
- 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground thyme
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 bone-in leg of lamb (6 to 8 pounds)
What to Do

Preheat oven to 350 degrees F.

In a small bowl, combine all ingredients except lamb. Mix well then, using a pastry brush or your hand, evenly coat all sides of lamb.

Place lamb on a wire rack in a roasting pan.
- Bake 2-1/2 to 3 hours or until desired doneness.
Notes
Carve the meat of the leg across the grain with a sharp knife and serve with the pan drippings.
