You know a cobbler's good when the neighbor's down the street are knocking on your door. Our Blackberry Cobbler is down-right delicious and sure to get you a coupl'a sniffs round your door!

What You'll Need

  • 1 1/4 cups sugar, divided
  • 1/2 cup (1 stick) butter, softened
  • 1 1/2 cups all-purpose flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 (12-ounce) packages frozen blackberries, thawed

What to Do

  1. Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a medium bowl, combine 3/4 cup sugar, butter, flour, milk, baking powder, and salt; mix well. Spread the batter into prepared baking dish.
  3. In a medium bowl, combine the blackberries and remaining sugar; mix well and spoon over the batter. Bake 40 to 45 minutes, or until bubbly and golden.

Notes

If you can't find frozen blackberries, fresh berries work great too!

This blackberry cobbler looks great, and seems fairly easy. It doesn't have a ton of ingredients either. I love fruit, especially berries. I would eat them constantly if I could. But, of course my family doesn't share my love of fruit. They only like certain kinds, so I will probably have to save this recipe for company.

I would like to know if I could use canned blackberry pie filling for this recipe? And would I have to adjust the sugar?

Hello! Yes, you can use canned blackberry pie filling in this recipe. As for the sugar - do not put the remaining cup sugar (step 3) in blackberry mixture. Enjoy!

Made this for new years day party and it was a hit. I was a little hesitant because I thought it was strange that the batter went in first and the blackberries went on top because in the photo it shows the berries underneath, but I followed the directions and the batter rose to the top during baking. There was no bitterness from the baking powder and I used fresh blackberries. Served warm with vanilla ice cream (yum!) Very simple and tasty - will be trying this with other fruits now. To get rid of the baking powder bitterness just use self-rising flour.

When I took this out of the oven, it looked like a coffee cake with blackberries in it. I thought it would be dry, but it wasn't. With a dollop of whipped topping on it, it was good. The only thing I didn't like is that there is so much baking powder in it that it has a bitter taste. Test Kitchen, what can be done to lessen the amount of baking powder so it loses that bitter taste?
