A clafoutis is a French dessert that was introduced to many Americans through Julia Child, who included it in her famous book, "Mastering the Art of French Cooking." Our version of Cherry Clafoutis is a little different from hers, but it's absolutely delicious. It's sort of like a Dutch pancake with a whole lot of cherry goodness going on!

What You'll Need

  • Cooking spray
  • 1/2 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 1/4 cups milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • 3 cups frozen cherries, thawed
  • Confectioners' sugar for sprinkling

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart baking dish (see Note), with cooking spray.
  2. In a large bowl, combine flour, granulated sugar, and salt; make a well. Add eggs, milk, vanilla, and lemon juice. With an electric mixer, blend until batter is smooth. Pour batter into baking dish and top with cherries.
  3. Bake 45 to 50 minutes or until golden brown and center is set.
  4. Sprinkle with confectioners' sugar, cut into wedges, and serve hot.

Notes

Clafoutis is best when baked in a wide shallow dish rather than a deep dish.
