Imagine the aroma coming from your oven when you bake our recipe for a Blueberry Dutch Pancake. This German pancake recipe is packed with antioxidant-rich blueberries which add a burst of freshness to every bite.

What You'll Need

  • cooking spray
  • 1 tablespoon butter
  • 1 large whole egg
  • 1 large egg white
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1/4 cup confectioners' sugar

What to Do

  1. Position rack in lower third of oven and preheat to 425 degrees F. Coat a deep dish pie plate with cooking spray, add butter, and place in oven about 5 minutes, or until butter is melted. Remove from oven.
  2. In a large bowl, whisk together egg and egg white. Whisk in flour, milk, vanilla, granulated sugar, and salt. Stir in blueberries. Pour batter into prepared pie plate and return to oven.
  3. Bake 15 to 20 minutes, or until edges are puffed and golden brown. 
  4. Remove from oven and sprinkle confectioners' sugar evenly over top. Cut into wedges and serve hot.

Would cranberries work?

Hi there! Cranberries will not work in this recipe, since they aren't as soft as blueberries and may explode when cooked.

Mine was a disaster. Bottom crust was doughy; don't think I would make it again. Sorry, Howard.

Absolutely love this! We use fresh fruit, kids love to see this rise in the oven and then deflate when it comes out! We make this for family brunch/breakfast during the holiday season and everyone makes their own quarter. Fresh fruit, whip cream, syrup, powdered sugar, even jam works! Also, I make this for supper when I'm not too hungry but want something to eat.

I have made this in an iron frying pan. let the iron fry pan heat in the oven. when oven and fry pan is hot add the butter or margarine to the hot pan to melt pour the mix into the hot fry pan and bake, it will not stick.

Did anyone else have trouble getting this out of the pan? I used a 10" pie pan and had an awful time with it. Maybe it would be better to skip the butter in the pan and use a heavier coating of cooking spray? I skipped the lemon and confectioners sugar and served it with cinnamon maple syrup. I plan to try this again and see if it is easier to get out of the pan next time.

Will make again. Going to try Almond flour as a gluten free alternative.

Just thought of something else to try. Make bananas foster and put the bananas on the pancake and bake, and then you could use the sauce as the topping. It might even be good enough to serve as a dessert. You serve bananas foster over ice cream. Instead serve the vanilla ice cream with the pancake. I might have to try this since I love bananas foster.

Instead of blueberries, try apples, peaches, or even manarin oranges served with homemade orange syrup.
