French Toast in a Mug

Breakfast on-the-go just got even better with our French Toast in a Mug recipe! In just about two minutes you can have a decadent breakfast that tastes like the perfect cross between french toast and rich bread pudding. Add a drizzle of syrup to take it over the top!
What You'll Need
- 2 slices bread, cut into 1/2-inch cubes
- 1/4 cup milk
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
What to Do
- Coat a 12-ounce microwaveable coffee mug with cooking spray. Place bread cubes in mug and press down lightly.
- In a small bowl, whisk milk, egg, vanilla, sugar, cinnamon, and salt. Pour egg mixture over bread cubes and let soak in for 1 minute.
- Microwave on high 1 minute, then add 10 seconds at a time till it's set.
Notes
- We used challah bread for this but feel free to use whatever bread you have on hand.
- Serve with maple syrup or sprinkle with confectioners' sugar.

Can I leave out the sugar? I'm Pre-dibetic. Or can I use sugarfree syrup as a substitute for the sugar ingredient?

Quick, easy, and satisfying - And, no, my mug was not ruined! I agree that it is more of a bread pudding than a french toast but for a meal that took less than 5 minutes to make I won't be complaining. It was warm and filing. The second time I made this I added no-sugar apricot jam and figs - It was great!

This managed to not only hurt my happiness, but it also struck my liver, gave me a hernia, and showed me the wrath a thousand sunset samurais - making me commit seppuku for my sins. In all seriousness though, this recipe was bland, ruined my mug (even after the cooking spray), and wasted all of my bread. I thought "hey, this can't be that bad given the ratings!" I have never been more wrong in my entire life. Would not make again, or recommend. IF YOU DO DECIDE TO MAKE IT, ADD MORE SUGAR. (Half a bottle of maple syrup is now sadly gone, even after an entire tablespoon of sugar.)

This is awesome! I agree, it's more bread pudding than french toast. But you know what? That's perfect, because I LOVE bread pudding, and now I don't have to make a whole pan. I used a Ramekin rather than a coffee mug (I just prefer using Ramekins for any "coffee mug" recipes), and it came out amazing. I loved that it is not very sweet. I also simply mixed all the liquid ingredients in the measuring cup I was using to measure the milk, no need to dirty up a separate bowl.

Just wanted to add something. My 6 year old had a horribly sore throat yesterday and refused to eat or drink anything. Well, he gobbled this up and then spent the rest of the day talking about how this bread pudding had made his throat feel better. He requested it again for dinner.

Much to my surprise, this was really good. It's perfect for someone who lives alone. I wouldn't normally fix breakfast for myself but I will make this frequently. I might add some finely chopped pecans next time.
