Strawberry Cheesecake French Toast

You'll feel like you woke up in a charming country inn when you taste this stuffed French toast. It's so creamy smooth, it's like eating a warm dessert cheesecake!
What You'll Need
- 1 (3-ounce) package cream cheese, softened
- 2 tablespoons confectioners' sugar
- 2 tablespoons strawberry preserves
- 8 slices country white bread
- 2 eggs
- 1/2 cup half-and-half
- 2 tablespoons granulated sugar
- 4 tablespoons (1/2 stick) butter
What to Do
- In a small bowl, combine cream cheese and confectioners' sugar; mix well then stir in preserves. Spread equally over 4 bread slices. Top with remaining bread slices, forming sandwiches.
- In a shallow bowl, whisk eggs, half-and-half, and granulated sugar until well combined.
- In a large skillet, melt 2 tablespoons butter over medium heat. Dip each sandwich into egg mixture, completely coating both sides. Cook 2 sandwiches at a time for 1 to 2 minutes per side, or until golden. Melt remaining 2 tablespoons butter in skillet and cook remaining 2 sandwiches. Slice each in half diagonally, and serve.
Garnishing Tip
Make this look and taste extra-fancy by topping it with additional confectioners' sugar and maple syrup and/or fresh fruit.

French toast is one of my favorite breakfast foods. This looks so yummy I gotta try this. I usually have biscuits and gravy for Christmas morning but this year we are going to try this french toast recipe.

A local restaurant makes "French Toast Supreme" using the sweet cheese with a layer of bananas in the french toast sandwich. Then they top the sandwich with fresh strawberries, a few blueberries, a sprinkle of pecans, and a drizzle of carmel sauce topping. Of course, some whipped cream is suggested to finish off their creation. I order this and savor every morsel. It's so good...I wish I could lick the plate!

I have made this twice for company. Both times I used fresh ripe strawberries. I diced them into small pieces with about 1 TBLS sugar and let them sit for about an hour. Drained some of the juices off, then mixed with the cream cheese. I used WAY more than the two TBLS of preserves called for in this recipe. (I also used more than 3 ounces of cream cheese). Followed the rest of the recipe as stated. Both times my guests just raved about it and wished for "seconds". I will keep this recipe to use for guests or brunches I have. I think I will also make this for my family for Christmas breakfast. Thanks for a wonderful "french toast" recipe.
