Tiramisu Pancakes

Don't tell anyone that the shortcut to this stack of bed and breakfast-worthy pancakes was right in your freezer! With a few creamy touches, breakfast or brunch tastes like a favorite Italian dessert. It's a recipe to do you proud.

What You'll Need

  • 24 frozen pancakes
  • 1 (8-ounce) package cream cheese, softened
  • 1 (8-ounce) package mascarpone cheese
  • 2/3 cup confectioners' sugar
  • 1 teaspoon instant coffee granules
  • 2 tablespoons water
  • 1 tablespoon unsweetened cocoa

What to Do

  1. Warm pancakes according to package directions.
     
  2. Meanwhile, in a large bowl, beat cream cheese, mascarpone cheese, and confectioners' sugar until well combined. In a small bowl, dissolve coffee granules in water then add to cheese mixture; mix well.
     
  3. Place a pancake on a plate then dollop with cheese mixture; repeat layers two more times, ending with a dollop of cheese mixture topping the stack. Repeat with remaining pancakes and cheese mixture. Sprinkle with cocoa, and serve immediately.

Instant coffee's okay, but if I needed something with a little more zing to it, I'd use a shot of espresso.

What is mascarpone cheese?

Mascarpone is a very fluffy, easy to spread cheese. Most good-sized supermarkets that I've seen have a refrigerated section for specialty cheeses--port wine, brie, stuff like that. If your local market has a cheese section, look there first; if it's not there, poke around where they keep the cream cheese. You can also improvise your own mascarpone cheese at home: there are several decent recipes online that are close enough for government work. As an absolute last resort, the video on this article says it is okay to double up on the cream cheese.

Frozen pancakes? You're better off eating the box they came in...both nutritionally and from a culinary standpoint.

Next time, watch the video before you say something stupid. He does say in the video that you can use your own pancakes. That is admittedly a better idea, if you have the time. The reason this recipe calls for frozen pancakes, is because it's a shorter prep time.
