Best Ever Noodle Pudding

This traditional Jewish dish is sometimes called noodle kugel and sometimes called noodle pudding. Whatever you call it, you'll find this Best Ever Noodle Pudding to be a sweet addition to any brunch menu.

What You'll Need:
  • 1 pound medium egg noodles
  • 1/2 pound (2 sticks) butter
  • 1 1/2 cups sugar
  • 6 eggs, well beaten
  • 2 teaspoons vanilla
  • 16 ounces sour cream
  • 16 ounces small curd cottage cheese
  • 4 ounces cream cheese
  • 9 cinnamon graham crackers, coarsely crushed
What To Do:
  1. Preheat oven to 350 degrees F. Spray a 9- x 13-inch baking dish with cooking spray and set aside.
  2. In a large pot, boil noodles for 7 minutes; drain and return to pot.
  3. Add ingredients, one at a time, mixing to melt into noodles. Pour mixture into prepared baking dish. 
  4. Bake 30 minutes. Remove from oven; top with graham cracker crumbs and bake about 15 minutes more or until a knife inserted in center comes out clean. 
  • Some people insist it's not noodle pudding without raisins, so feel free to add 1/2 cup raisins to mixture before baking. It's up to you!

This recipe is delicious, but it has a million calories per serving. If you leave out the sugar you don't have a sweet kugel which is what this is supposed to be. And don't serve it with brisket, it belongs with bagels and lox.

try using Splenda in place of sugar and agave nectar in place of honey.

This is great . Grew up on noodle pudding, My problem now is that heir are only there of us now and need help inscaling this back. This is grat for Church Suppers. Marg Day

Wonderful old fashioned Jewish dessert if you like you can use vanilla wafers, corn flakes or whatever even leave it out and just have the noodles which is more traditional BUT it must have raisins this recipe is a fattening fantastic Favorite!

Will dividing the reoipe in half affect the over all flavor? I'm not sure about "sweet noodles".

this is great with raisin, cherries-marishino, and pinapple tidbits top with cinna mon.

How many calories are there in this yummy sounding pudding? And what are graham crackers? we don't have them in England. Or if we do I don't know where to find them.

Most kugel recipes do NOT call for graham crackers at all so feel free to leave them out.

You can use corn flakes which is how my mother always made this. Just add some cinnamon to the mixture-the amount is up to your personal preference. Hope this helps!

I think Graham crackers are called Digestive Biscuits in England. Using 1/2 digestive biscuits and 1/2 crushed rich tea biscuits may make it similar to Graham Cracker crumbs.

How many calories? If you really want to enjoy this, you don't want to know. ; )

I ate some of this as dessert at a Greek Restuarant. Me and my girlfriend asked for the recipe and they wouldn't give it to us. Later at the shopping mall, we thought about going to a book store and looking for the recipe. We had good luck and found it. It was just like this one,only it didn't have the graham cracker crumbs. I lost my receipte moving and have not seen another one like it until I saw this one. Plan to make it tomorrow. It is delicious.

Is this a dessert of a side dish. Sounds really good. Served warm or cold?

Can be both, ususally warm is better! Just from experience!

For me, i would reduce the butter by at least half, only four eggs, cut out the sugar completely and just dust with cinnamon (and maybe sliced almonds) on the top rather than the graham crackers. We like to add pre-soaked white raisins and use the wide noodles, not the thin ones in the image. It becomes more of a savory side to brisket or poultry than a dessert.

I lost my mother's recipe for Noodle Pudding and have tried several that were not very good. I tried this recipe and it was like old home week! It was everything I remembered my mother's recipe to be! Excellent!!
