Automat-Style Coconut Cream Pie

Our from scratch Automat-Style Coconut Cream Pie will quickly become a favorite dessert, and bring back memories for those who grew up loving it! It's whipped, light, and full of that shredded coco-nutty goodness we all love.
What You'll Need
- 1 egg yolk
- 1/3 cup sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded coconut
- 1 (9-inch) prepared graham cracker pie crust
- 2 cups frozen whipped topping, thawed
What to Do

In a medium bowl, mix egg yolk, sugar, flour, and salt with a spoon; set aside.

In a medium saucepan, heat milk over medium-high heat, but do not boil. Add 1/2 cup heated milk to egg yolk mixture and whisk until most lumps are out. Slowly add egg yolk mixture to remaining heated milk in saucepan; reduce heat to medium-low and cook until thickened, stirring constantly. Add butter and vanilla; stir until well mixed.

Remove from heat and stir in coconut. Pour into pie crust.
- Chill at least 2 hours, or until set. Top with whipped topping just before serving.
Notes

If desired, top the pie with 2 tablespoons toasted coconut. To toast shredded coconut, spread it on a rimmed baking sheet and bake in a preheated 350 degree oven 3 to 5 minutes, or until golden. Watch carefully so it won't burn.

I ended up putting a little cornstarch mixture in it. I'll let you know how it turned out after I've tasted it!

This ended up being delicious and just thick enough with the cornstarch added. I used a chocolate ready made crust. Yummy!

This pie is great with either topping, I prefer the Meringue with coconut on top and browned in the oven. I have also used the basic filling to make a "bananna pudding" I use the tradional vanilla wafers for base and slice in the bananna's, I also use a meringue topping on my bannana pudding. This filling comes out great, and it's very easy to make. The person who said this had no taste, must have missed something in recipe. By the way I'm 75 years old, and I've never met a pie id didn't like.

I've been making a coconut cream pie with a whipped cream topping for 25 yrs....I'm not fond of meringue....a lemon meringue pie calls for meringue...this is a coconut cream pie and I have never had one with a meringue topping....this is very good and if you are a big fan of meringue, then it would probably be fine for your taste buds...

Where did you read this recipe calls for a meringue topping? There is no mention of topping with meringue. The ingredients call for 1 egg yolk and nothing is mentioned of egg white. I don't know what recipe you read.

Just to enter my thought :/ A 'meringue topping' has to be put in oven for a short time; this is a [no bake] pie. "Mr Foods Team" is giving us a delicious recipe to try, and (if) although I doubt that we wouldn't care for it, (then) make your pie your way with 'the meringue.' Please don't discourage "the food team,"...... give commendation; we all need that. They truely do a 'outstanding job'! And we're fortunate that we still have this site since the death of "Mr. Food."
