Mini Sweet Potato Pies

Mini Sweet Potato Pies
14 Min

Bake up your sweet potato pie in a muffin tin for a fun way to serve 'em up during the holidays. Our Mini Sweet Potato Pies are full of bite-sized deliciousness and they're great for parties where there's more than one dessert to enjoy!

What You'll Need

  • 1 (14.1-ounce) box refrigerated pie crust
  • 2 (15-ounce) cans sweet potatoes, drained
  • 1 (5-ounce) can evaporated milk
  • 2 eggs
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 90 mini-marshmallows

What to Do

  1. Preheat oven to 425 degrees F. Coat 18 muffin tins with cooking spray.
  2. Unroll pie crust onto a flat surface. Using a 2-inch cookie cutter, or juice glass, cut out 9 circles from each pie crust. Press dough into muffin cups, set aside.
  3. In a blender, combine the remaining ingredients, except marshmallows, and puree until smooth.
  4. Spoon mixture evenly into each cup. Bake for 10 minutes, or until toothpick inserted comes out clean.
  5. Place about 5 marshmallows on top and place back in oven and cook for 2 to 4 minutes more or until marshmallows soften and turn golden.

To make a bite-sized version, use 36 mini-cupcake tins and use a shot glass to cut the circles.

If I want to use mashed sweet potatoes, how much should I use? 2 cups? Thanks

Hello! We recommend about 1.5 cups of mashed sweet potatoes. Hope that helps. :)

I make my desserts 1 or 2 days ahead. How would I store these?

Hi there! To store these just seal them in an airtight container and place them in youe fridge. However, if it is possible, don't add the marshmallows until the day of. Storing already toasted marshmallows in the fridge will causing them to "weep" outside the pie. So, the day you are planning on serving these, just place the marshmallows on top and then place them in the broiler for 1 minute. This should do the trick! Hope this was helpful.

German Wave Cake

Donauwellen is a classic German dessert that's often called the "German Wave Cake." That's because the layers in this cake look like the waves of the Danube river. Our version starts off with a box of cake mix, to make it really easy, and features all of the classic flavors, including chocolate, vanilla, cherries, and pudding.
