What You'll Need
- 1/2 cup plus 1 tablespoon sugar, divided
- 1/2 teaspoon ground cinnamon
- 5 large ripe peaches, peeled and sliced
- 1/4 cup all-purpose flour
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 (14.1-ounce) package refrigerated rolled pie crust
- 1 egg
What to Do
- Preheat oven to 375 degrees F. In a small bowl, mix 1/2 cup sugar and the cinnamon; reserve 1 tablespoon mixture for garnish.
- In a large bowl, combine peaches, flour, butter, vanilla, and cinnamon-sugar mixture; mix well. Unroll one pie crust and place in a 9-inch pie plate, pressing crust firmly into plate. Spoon peach mixture into crust.
- Unroll remaining pie crust and place over peach mixture. Pinch edges together to seal, then flute. Cut 4 (1-inch) slits in the top, brush with egg, and sprinkle with reserved cinnamon-sugar mixture.
- Place pie plate on a rimmed baking sheet and bake 45 to 50 minutes, or until golden and bubbly. Let cool slightly before serving.
