Honey Dijon Pork Roast

Tangy Dijon-style mustard and a hint of honey sweetness make this pork loin roast a mouthwatering favorite! After enjoying it as a main dish, take advantage of any leftovers for hearty sandwiches!

What You'll Need

  • 1/4 cup honey
  • 2 tablespoons plus 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1 (2- to 2-1/4-pound) boneless center-cut single pork loin

What to Do

  1. Preheat oven to 375 degrees F. Coat a medium roasting pan with cooking spray.
     
  2. In a medium bowl, combine honey, mustard, and salt. Place pork in roasting pan and coat completely with mixture.
     
  3. Cover pork with aluminum foil and roast 40 minutes. Uncover and baste with pan drippings.
     
  4. Roast pork an additional 15 to 20 minutes, or until no pink remains. Slice and serve with pan drippings.

 

Notes

Tip - Thinly sliced and topped with a little extra Dijon mustard, this roast makes super sandwiches.

Your "Cook Time" says only 15 minutes! But in the instructions, the cook time totals 55-60 minutes. You might want to fix that error -- especially since it's for pork!!

I made this today for lunch it was DELICIOUS - my entire meal was from recipes from Mr. Food along with the Honey Dijon Pork Roast I made Best Bacon Brussel Sprouts and Farfalle pasta with the Classic Alfredo Sauce. A WONDERFUL meal!!!

I strongly suggest not undercooking pork. All pork should be thoroughly cooked, it's not worth gambling with raw pork. One can become awfully sick with the results.

Since I always put my roasts in the oven frozen, I put them in a corning ware dish with a cover. Cook at 375 degrees for about 1 hr. Then turn down temp to 275 for another hr & 30 min. Works great for me. Because I buy roasts when they are on sale.

JVP: The U.S. Department of Agriculture has recently updated their guidelines to state that pork can be safely cooked to medium rare at a final internal cooked temperature of 145 degrees F. Hope that helps, and thanks for cooking with us!

This roast is delicious, but it needs a much longer cooking time than stated in the recipe. The government recommends that you cook pork to an internal temperature of 170 degrees F. My oven was recently calibrated, and I cooked the roast just a few days ago. Instead of the 40 minutes covered, I baked it for a full hour with the foil on. After removing the foil, the internal temperature of the pork loin was only 153 degrees, and the meat was difficult to pierce with a fork. It took almost another hour uncovered to reach the recommended temperature and feel tender.
