French Roasted Potatoes

We've added just a hint of flavorful Dijon-style mustard to these French Roasted Potatoes to give them that special pizzazz that makes everyone go "OOH!" We know you're going to want to serve these during the holidays, but they're great anytime, too!
What You'll Need
- 24 small red-skinned potatoes, quartered
- 4 garlic cloves, coarsely chopped
- 2/3 cup Dijon mustard
- 1 stick butter, melted
- 2 tablespoons chopped fresh parsley
What to Do

Preheat oven to 350 degrees F.

Place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil. Bake 60 minutes or until potatoes are just fork-tender.

In a medium-sized bowl, blend mustard, butter, and parsley; toss with hot potatoes.

Bake, uncovered, an additional 15 minutes or until potatoes are crisp. Serve immediately.

I am on my own, so I am always figuring out ways to cut down large recipes such as this. I have found that if I blend the mustard parsley with roasted garlic, and then whip that into the stick of softened butter I have a WONDERFUL composite butter to top a baked potato or in which to saute a chicken breast. It also livens up green beans when serving them with roasted chicken. I wrap the extra butter in small plastic wrap packets freeze them in a zip close freezer bag I label with the flavors of the butter.

Hi there! We had initially intended these to be a holiday go-along, and with so many go-alongs during the holidays we cut down the serving size so that you could enjoy a little bit of everything! But there's no reason why these potatoes can't be eaten at any time of the year, so we've made sure to adjust the serving sizes! Of course, this still depends on how much (or how little) your gang loves to eat. :)
