What You'll Need
- 4 tablespoons vegetable oil
- 2 pounds -1/2 pounds yams or sweet potatoes, peeled and cut into 1/4-inch-thick slices (2 to 3 large yams)
- 1/4 teaspoon salt
What to Do
- In a large skillet, heat the oil over medium-high heat; add the potatoes and fry for 10 to 15 minutes, turning occasionally until brown and crisp. Season with the salt.
