Mashed potatoes always offer stick-to-your-ribs comfort, and our Mashed Potato Casserole is a new twist on a family favorite side dish recipe. This potato casserole is extra-rich and creamy thanks to the addition of cream cheese. Your spuds will never be duds if you make 'em this way! 

This creamy and tasty mashed potato casserole recipe is ideal for a simple appetizer. Make it with a pork roast or bring it to your next potluck.

What You'll Need

  • 4 pounds potatoes, peeled and cut into chunks
  • 1 (8-ounce) package cream cheese, softened
  • 2 tablespoons finely chopped onion
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup French-fried onions

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with cooking spray.
     
  2. Place potatoes in a soup pot, add just enough water to cover them, and bring to a boil over high heat. Reduce heat to medium and cook 15 to 20 minutes or until fork-tender; drain.
     
  3. In a large bowl, with an electric mixer on medium speed, beat potatoes and cream cheese until smooth. Add onion, eggs, flour, salt, and pepper, and continue to beat until well blended. Spoon into casserole dish.
     
  4. Bake 30 minutes, sprinkle with French-fried onions, and cook 5 to 10 more minutes or until heated through and golden.

Can I use the already made mashed potatoes from the grocery store?

Hi there! You can use packaged potatoes, so long as it doesn't have any sour cream in it. They need to be plain. Enjoy!

Have been making an almost identical recipe for about 45 years now ,and will try this one with the cream cheese. You just cannot go wrong with this! Even my son-in-law, who doesn't care for mashed potatoes, asks for these for every dinner.

Fantastic Side dish !! I did make one change.I used caramelized onions on the top in place of the fried onions. SOOO GOOOD!

I like the idea of the caramelized onions! My fiance does not like french fried onions so this is a great alternative!

I'm excited to say I'm going to use this recipe for my pierogi's that I'm making for Christmas. I'm so fussy with potato pierogi's the basic potato and cheese just don't do it for me. I might share some o) lol

delicious...I too cut recipe down as only two of us...and I put peeled garlic cloves in with the potatoes while they were boiled...then it becomes cheesy and garlicy mashed potato casserole...yummy

Personally, I wouldn't add the canned onion rings until the last 5 mins. of baking so the rings are just golden and not burned.

To cook potatoes, especially they are going to be mashed, I cook them in the microwave. Peel, cut up, cover with water, and a sheet of plastic wrap over the top. Time depends on how many potatoes there are. I usually use approximately 4 to 5 and zap them for about 14 minutes. Drain and then mash in the same bowl you cooked them. Of course make sure it's microwavable. I have a 2 qt. glass mixing bowl shaped like a pitcher with a handle and spout. It works perfect for the potatoes and lots of other things.

Also very good with cauliflower instead of potatoes

You can always make changes to a recipe with ingredients you prefer. It might not taste the same as the originial but then isn't that the purpose of the substitutions, to make it taste different?

Great...finally something new to do with mashed potatoes...can't wait to try and also share with my daughter and her family. They all love mashed potatoes.

I would think 5 lbs of potatoes would make more than 6 servings, does anybody know?

I think you're right. Normally, for mashed potatotes, you use one potato per person and then throw one extra in for good measure. This sounds like a casserole dish for company or potluck--serving more than six (unless they're teenagers and then who knows). This also would be good with the use of softened chive cream cheese, I think. Bon Appetit!

I halved the recipe when I made it for my 2 children and I and there was enough left over for 3 more serves. Delicious though.

As the years go on, the grands get bigger, as do their appetites. With 9 adults, I cook 4 1/4-4 1/2 lbs of potatoes for mashing, and it feeds everybody, with 2 usually having seconds. The 9 adults are 3 women and 6 men. Hope this helps

Sounds good-I think the addition of garlic and bacon bits would add a lot of extra flavor.
