What You'll Need

  • 1/2 teaspoon black pepper
  • 6 red potatoes (about 2 pounds), scrubbed and cut into 1-inch chunks
  • 2 onions, chopped
  • 1/3 cup vegetable oil

What to Do

  1. In a large bowl, combine paprika, garlic powder, salt, and pepper; mix well. Add potatoes and onions; toss to coat evenly.
  2. In a large skillet over medium-high heat, heat oil. Add potato mixture to skillet; cover and cook 10 minutes.
  3. Increase heat to high, uncover, and cook 8 to 10 additional minutes, or until potatoes are tender and golden, stirring occasionally.

I'll be using this recipe! Nothing beats home fries for breakfast, lunch, or dinner.

Can white potatoes be used in place of red?

Yes, they can!

Simple to put together and so easy when I baked them in the oven like the Mr Food test kitchen team suggested. The aroma was tantalizing. The taste was wonderful. Ooh! SO good!

Quick in the morning if the 'taters are already steamed a day or two before, either on purpose, or left from a dinner. A little bacon grease or crumbled bacon never hurts! Yum!

The potatoes were wonderful. I wouldn't change a thing. Good work kitchen team.

If oven roasted, do you shake them in oil first? or spray the pan? thanks!

To roast them in the oven, toss the potatoes with the oil and seasonings. Then spread them out on a baking sheet and roast them at 400 degrees for about 35 to 45 minutes.

Can I do these in the oven, as well?

Yes you can! Roast them at 400 degrees for about 35 to 45 minutes or until crispy on the outside and tender on the inside. Enjoy!
