Our recipe for Creamy Rice Pudding is the creamiest rice pudding you'll ever taste! A bit of butter and other tasty add-ins make this version unbelievably delicious!

What You'll Need

  • 1 1/2 cups water
  • 3/4 cup uncooked long-grain rice
  • 2 cups milk, divided
  • 1/3 cup sugar
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup raisins (optional)
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract

What to Do

  1. In a saucepan, bring water to a boil. Stir in rice, reduce heat to low, cover, and simmer for 20 minutes.
  2. In a separate saucepan, combine cooked rice, 1-1/2 cups milk, sugar, cinnamon, and salt. Cook over medium heat until thick and creamy, 18 to 20 minutes. Stir in remaining 1/2 cup milk, egg, and raisins, if desired. Cook 2 to 3 minutes or until it begins to thicken up, stirring constantly. Remove from heat and slowly stir in the butter and vanilla.

I would suggest whisking the milk and the egg together before adding it to the hot rice mixture. If the egg goes into the hot pot alone it could cook too quickly and scramble instead of forming a sort of creamy custard. I have used brown rice before in this recipe and it works, however, you just have to cook the rice a little longer in the first step for it to get tender.

This is one of my favorite rice pudding recipes.

Are the comments below for theCreamy Rice Pudding? Nowhere do I see half-n-half or one-half stick of butter in the above recipe. Please explain.
