What You'll Need

  • 1/4 cup mayonnaise
  • 1/8 teaspoon black pepper
  • 1 (10-ounce) can chunk-style chicken, drained and flaked
  • 4 slices white or wheat bread, toasted
  • 1 1/3 cups frozen asparagus cuts (from a 10-ounce package), thawed and drained
  • 4 slices Swiss cheese

What to Do

  1. Preheat the oven to 400 degrees F. In a small bowl, combine the mayonnaise and pepper, then add the shredded chicken.

  2. Place the 4 slices of toast on a cookie sheet. Top each slice of toasted bread with a 1/2 cup of the chicken mixture, then top with 1/3 cup of asparagus cuts, and cover with a slice of cheese.

  3. Bake for 5 to 8 minutes or until the sandwiches are heated through and the cheese is melted.

You don't have to use Swiss cheese if you prefer another kind. Use your favorite.
