Check out our lightened version of the classic appetizer, Spinach and Artichoke Dip. Bet you can't tell the difference!

What You'll Need

  • 2 (6-ounce) packages fresh baby spinach
  • 1 tablespoon butter
  • 1 (8-ounce) package 1/3-less-fat cream cheese
  • 1 garlic clove, chopped
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1/2 cup light sour cream
  • 1/2 cup (2 ounces) shredded part-skim mozzarella cheese, divided

What to Do

  1. In a large microwave-safe bowl, microwave spinach  on HIGH 3 minutes, or until wilted. Drain spinach well, pressing between paper towels, then chop.

  2. Preheat oven to 350 degrees F.

  3. In a nonstick skillet, melt butter over medium-high heat. Add cream cheese and garlic; cook 3 to 4 minutes, stirring constantly, until cream cheese melts. Fold in spinach, artichokes, sour cream, and 1/4 cup mozzarella cheese; stir until cheese melts.

  4. Transfer mixture to a 1-quart shallow baking dish. Sprinkle with remaining mozzarella cheese.

  5. Bake 15 minutes or until hot and bubbly. Serve immediately with fresh pita wedges or baked pita chips.

I really love the spinach and artichoke dip that T.G.I.Friday's has, and I love that they sell it in store, but it is kind of expensive and is not that big of a portion. It is great to have a recipe that I can make for parties and such.

Loved it, have been looking for a good recipe for my go to dip and looks like i found it thanks! I used regular sour cream because anything light has more bad ingredients in it, the less ingredients the better)

I make this all the time but I never use anything low fat, less fat or skim. My neighbor made it this way and asked me to compare it to mine. No comparison. Hers was a little gloppy and had an off putting taste and texture. Mine is creamy and the texture is heavenly. Besides....I also use Hellman's mayo in mine as well.

That's funny-no low fat, less fat, or skim. I like your style codcut! And the same goes for meat that's too lean! You've got to have some marbling!

How much Hellmans?

INSTEAD OF SOUR CREAM I USE ALFREO SAUCE AND CREAM CHEESE

Can I use frozen, thawed chopped spinach in place of fresh?

I don't see why not, but fresh is always better (a course that is just my opinion) Happy Holidays =..= :)
