Deli-Style Beef Barley Soup

What You'll Need
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound beef chuck steak, cut into 1-inch chunks
- 1 tablespoon olive oil
- 8 cups beef broth
- 1/2 cup pearled barley
- 3 carrots, diced
- 1 large onion, diced
- 1 celery stalk, diced
What to Do
- In a medium bowl, combine flour, salt, and pepper. Add beef and toss until evenly coated.
- In a soup pot over high heat, heat oil; add beef and brown on all sides 5 to 7 minutes. Add remaining ingredients and bring to a boil; reduce heat to low and cook 45 to 50 minutes, or until barley is tender.
Notes
Some crusty bread and maybe a Tossed Garden Salad and you've got a delicious meal!

This soup is absolutely delicious and so easy to make. I added sliced mushrooms near the end of the cooking time, but otherwise made it exactly as written. Another winner, Mr. Food!

I love this soup! It's so easy to make and is delicious. I add a full cup of barley because the first time I made it I used a 1/2 cup as the recipe calls for and it was nowhere near enough. It definitely did not look like the picture with that small amount of barley added.

I add 2 cloves minced garlic 2 bay leaves to ingredients simmer for an hour then add 1 large can whole tomatoes cut up simmer for 30 minutes ad salt pepper to taste

I absolutely love how simple and affordable this soup is to make - all pantry staples that are relatively inexpensive. (I buy my meat on sale and freeze it) Not to mention that barley is a whole grain with a great chewy texture! I was surprised to find out that it tastes like something I tried and enjoyed at a favorite family restaurant a few years back. Will definitely share with others.

Yes, it should take approximately 5-6 hours on LOW or 3-4 hours on HIGH, or until meat and barley are tender. Enjoy!
