We love Mama Marie, but believe it or not, her Wedding Soup has nothing to do with an actual wedding. The little meatballs, Italian greens, and rich broth come together in the perfect marriage of flavors and textures! Mama Marie's Wedding Soup is an Italian classic that's perfect for the holidays, or anytime you want a warm-ya-up soup. 

What You'll Need

  • 11 cups chicken broth
  • 1 (14-ounce) package cocktail-sized frozen meatballs
  • 2 eggs, beaten
  • 4 cups freshly chopped escarole or spinach
  • 3/4 cup grated Parmesan cheese, plus extra for garnish (optional)

What to Do

  1. In a 5-quart or larger slow cooker, combine broth and meatballs. Cover and cook on HIGH 2-1/2 hours or on LOW 6 hours or until meatballs are heated through.
  2. Remove cover and gradually stir in egg, forming thin strands. Stir in escarole and 3/4 cup Parmesan cheese. Serve immediately topped with additional Parmesan cheese, if desired

Real Italian wedding soup does NOT have egg in it. It also does have Acini Di Pepe (type of small pasta) and shredded chicken.

Great... I make my own meatballs and drop them right onto the soup simmering till done then add escarole or spinach and a handful of Acini De pepe (in the pasta isle) then simmer a few minutes stirring often I do not add red pepper flakes but always have a bottle handy for anyone who wants to add it great soup always have plenty of hot cheesy garlic bread to go with it Now that's Italian!

In addition to the Acini Di Pepe, a form of pasta, I add a bit of crushed red pepper to add a bit of "heat". It can be served on the side for those who don't like the heat. I have also made this and added butter beans or cannellini beans -- if you do, then omit the Acini Di Pepe. If you make your own meatballs, try making them with either sweet or hot Italian turkey sausage. Omit the crushed red pepper if you use hot turkey sausage. Definitely need the crunchy garlic bread on the side. This is a yummy soup for cold winter nights -- and don't forget the glass of vino!

you forgot the aci de pepe or little rings thus the symbol of wedding (rings) get it
