"Souper" Burger Soup

We've all had barbecue parties where we made too many burgers and a bunch ended up sitting in the fridge for days before being thrown out. That won't happen now 'cause Souper Burger Soup is a great way to enjoy leftover hamburgers...and buns, too!

What You'll Need

  • 4 (1/4 pound) cold cooked hamburgers, broken into large chunks (see Note)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 1/2 cups beef broth
  • 1 (28-ounce) can crushed tomatoes
  • 1 medium-sized onion, chopped
  • 1/4 cup sweet relish
  • 2 tablespoons ketchup
  • 1 tablespoon prepared yellow mustard
  • 2 hamburger buns, torn or cut into 2-inch pieces
  • 1 cup shredded Cheddar cheese, divided

What to Do

  1. In a soup pot, combine all ingredients except buns and cheese. Bring to a boil over medium-high heat then reduce heat to medium-low. Simmer 20 to 25 minutes, or until onions are tender.
     
  2. Add buns and 3/4 cup cheese and cook 8 to 10 more minutes, stirring frequently, or until buns dissolve and soup thickens.
     
  3. Spoon into bowls and sprinkle with remaining cheese.

     

Note

If you don't have leftover cooked hamburgers, you can saute 1 pound ground beef until no pink remains, drain it, and add it in place of the cooked hamburgers.

This would be a great recipe to have around after the Fourth of July with all of those extra burgers!

I made this recipe, but instead of leftover hamburgers I made meatballs and left the buns out. It was served OVER the buns (kind of a 'sloppy joe' style). My family loved it!

I agree. I wouldn't put in the buns, but I don't think it is a bad idea for using leftovers. I like the idea of putting in some cut up hot dogs. I'm going to give this recipe a try.

usually i can tell from a recipe if it will be good by ingredients and im sorry to say this sounds gross .. like a big pot of hillbilly slop ! i doubt i'll even waste ingredients

could this be done in a slow cooker?

It sounds awful with that bread broken up in there!!! but I can't judge until I taste it. The problem is I will not make it so therefore I won't judge it.

why not let the buns get stale and use them as croutons?

Why not cut up the buns and toast them in the oven and use them like croutons

this soup is great! we thrown the left over hotdogs in too!

I think this sound horrible, but I can't judge until I make it, right?

I believe I would thicken it with instant potatoes over hamburger buns.
