Carolina Marinated Mushrooms

The popularity of these tasty goodies is really mushrooming! Why? 'Cause they're so simple to make, they're packed with flavor, and they come from the heart of the south!
What You'll Need
- 2 (4½-ounce) jars whole mushrooms, drained
- 1 small onion, sliced
- 1/3 cup red wine vinegar
- 1/3 cup vegetable oil
- 1 tablespoon light brown sugar
- 1 teaspoon prepared yellow mustard
What to Do
In a medium-sized saucepan, bring all ingredients to a boil over medium-high heat. Allow to boil 8 to 10 minutes, or until onion is tender. Remove from heat and allow to cool completely.
- Store in an airtight container and chill at least 4 hours before serving.
Whole mushrooms not available? Use sliced - they work just as well.
