Grilled seasonal veggies are always a big hit with my crowd, but not everyone has a special grill pan. The same thing can absolutely be done using those inexpensive wooden skewers. Just cut the veggies larger, drizzle or spray with the oil, and sprinkle on the seasonings. A great side dish for any sort of meal!

I fixed this last night for supper while I was grilling pork chops. We really liked it and will have it again. I also tossed in two small banana peppers (from my garden) and a "Fooled You Jalapeno pepper," also from my garden. This recipe is a "keeper."

When I roast vegetables in the oven I use the bottom rack, set the oven at 425 and cook for about 15 minutes or until desired tenderness. In the winter months I will combine cauliflower & broccoli heads, onions quartered, and mini carrots split lengthwise. I have also used italian salad dressing with a little extra olive oil, which gives a nice variation to the taste.

Would love to make this during the winter months, so how long would you cook this in the oven and at what temperature? Thank you, love this site.
